Avocado Cilantro Dressing

Avocado is one of the world’s most perfect foods. It’s incredibly delicious and so versatile. Avocado can be used to make dips, dressings, sauces, smoothies, soups and desserts, and is wonderful added to salads, sandwiches, stuffed with other veggies and fruits, or added as a topping to almost anything!

Avocado is also easily digested and contains over 25 essential nutrients including iron, magnesium, and essential fatty acids that help the body to function optimally. Avocados increase the body’s ability to assimilate nutrients, so they are a wonderful addition to green leafy salads to ensure proper absorption of all the vitamins and minerals.

They are an excellent source of glutathione, which helps to boost the immune system, strengthen the heart, rebuild the nervous system, and slow the aging process. The monounsaturated fats in avocados reverse insulin resistance, which helps to steady blood sugar levels.

Due to its nutritional profile, avocado is one of the closest foods to mother’s breast milk, being a complete and easily assimilated food with protein ratios that are equal to breast milk. Avocados are high in folate, which is essential for women in childbearing years and is also known to aid in preventing strokes and reducing the risk of heart disease. Try adding a couple avocados to your diet each week and enjoy the benefits of this delicious and health promoting food.

Today I have a wonderful, creamy dressing recipe to share with you that is perfect on any salad, or used as a light dip for vegetable crudités.

Avocado Cilantro Dressing 

Ingredients:

  • 1 large avocado
  • 2 cups zucchini, peeled and diced
  • 2 medjool dates, pits removed
  • ¼ cup cilantro leaves
  • 1/2 lemon, juiced
  • optional sea salt and pepper

Directions:

Blend all ingredients until smooth, adding water as needed to desired consistency, about ½ cup. 

Enjoy over salad greens or as a dip with raw vegetables such as cucumber, cauliflower, or bell pepper. 

Serves 1-2

Sweet & Spicy Mango Salsa

Mangos aren't just exceptionally tasty, they are also have incredible healing properties. They help to alkalinize the whole body by helping to flush out toxic acids and rebuild the alkali reserves in the body. They're also packed with enzymes and are a prebiotic food, meaning they contain compounds that stimulate and feed the good bacteria in the intestines which greatly aids in digestion and assimilation. 

Mangoes are an amazing source of vitamins A, C, E, and B-complex as well as health promoting flavonoids such as beta-carotene and alpha-carotene. They're also a powerful anti-cancer food and are specifically known to help prevent lung, breast, colon, prostate, blood, and oral cancers. Enjoy this recipe anytime of day. It's wonderful eaten on its own, or served with guacamole, hummus, vegetable crudités or a healthy cracker you enjoy. Or scoop into lettuce or cabbage leaves taco-style, or over a salad. 

Sweet & Spicy Mango Salsa

Ingredients:

  • 2C mango, diced 
  • 2C tomatoes, diced 
  • 1C avocado, diced 
  • 1/2C onion, minced 
  • 2 tbsp orange juice 
  • 1 lime, juiced 
  • 1/4C cilantro leaves, minced 
  • 1 tbsp jalapeno, minced 
  • 1 tsp cumin 
  • optional dash of cayenne 
  • optional sea salt and pepper

Directions:

  1. Add all ingredients to a medium bowl and mix together until well combined.
  2. Enjoy with raw vegetables, crackers, or scooped into lettuce leaves.

Figs with Macadamia Cheese

It doesn't get much more delicious than fresh ripe figs and creamy smooth macadamia nuts. And together, they are a match made in heaven.

Not only is this wonderful combination a flavor explosion, they also contain an incredible amount of healing properties. 

Figs provide phenomenal amounts of energy and vitality to the body, and aid in the repair and restoration of the digestive, cardiovascular, lymphatic, reproductive, muscular, immune, and skeletal system. Figs are one of the most alkaline fruits available and are rich in minerals such as calcium, iron, potassium, selenium, and zinc. In fact, figs are one the highest sources of readily assimilable calcium in the plant world which makes them a great choice to help prevent osteoporosis and their potassium content can help to prevent hypertension as well.

Macadamia nuts are a rich source of energy and are packed with essential minerals, vitamins, and heart healthy mono-unsaturated fatty acids such as oleic acid. They're an excellent source of iron, magnesium, zinc, selenium, and B-complex vitamins. They also contain flavonoids which are compounds that protect the body from free radical damage and diseases such as cancer. They can also provide protection from strokes and coronary artery disease, and be of help in lowering LDL (bad) cholesterol and increasing HDL (good) cholesterol in the blood. 

Today's recipe gives you all these healing benefits in an incredibly tasty, bite-sized package. It's also quick and easy to make, while being an impressive option to serve for friends or family. Enjoy this delightful recipe!

Figs with Macadamia Cheese and Raw Honey

Ingredients:

  • 2 lbs of fresh figs, any variety
  • 1/2C raw macadamia nuts
  • 1/2 lemon, juiced
  • 1 dime sized sliver of garlic
  • 1/2 tsp olive oil
  • 1 tsp raw honey
  • 1 sprig fresh rosemary
  • Additional raw honey for drizzling

Directions:

To make the macadamia cheese, blend macadamia nuts, lemon juice, olive oil, honey and garlic in the blender until smooth and creamy. Set aside in fridge to cool. 

Mince 1 tsp fresh rosemary. 

Slice figs and arrange on plate. 

Top with a dollop of macadamia cheese and a sprinkle of rosemary. 

Finish with a drizzle of raw honey and enjoy!

Serves 2-4

Chronic Illness

Have you hit a roadblock with your health? Have you searched everywhere for answers, with no results? Do you feel sick, tired, and stuck? If so, you're not alone. Countless people are in the same position, struggling and suffering with what I call mystery illness. I'm sure you've heard the term before, most likely in a news story about six kids in a small town who were hospitalized with unexplained symptoms. You could certainly call that "mystery illness." If we stop the definition there, though, we ignore the untold numbers of people who are visiting doctor after doctor, sometimes getting labels like chronic fatigue syndrome, rheumatoid arthritis, Hashimoto's thyroiditis, Lyme disease—and yet don't feel better. People whose lives are on hold while they confront autoimmune disease and other forms of chronic illness. People who would give anything to reclaim their lives.

It's time for a massive wakeup call about just how prevalent mystery illness is. Migraines, depression, type 2 diabetes, fibromyalgia, lupus, multiple sclerosis, ADHD, autism, vertigo, Candida, colitis, Crohn's disease: while they may have names, they're still mysteries to the people who suffer from them and the health-care professionals who long to get their patients better. How often have you seen someone make a full recovery from one of these conditions?

Medicine has made leaps and bounds when it comes to life-saving technologies and procedures. Where would we be without emergency surgery, preventative care, and the miracles of rehab therapy? Doctors are heroes. They make the world go 'round. They just haven't yet been handed the tools to correctly diagnose and truly treat the mystery illnesses that plague so many people.

A Roadmap for Healing

There are answers to the mystery of what's making you sick—real, physical explanations for your maladies. Your illness isn't a manifestation of your thoughts; you didn't attract it. It's not in your head. Your body wants to heal, and it can heal. If you've ever heard the theory of autoimmune disease, that the body sometimes becomes confused and attacks itself, let that go. The body never attacks itself. Your body hasn't betrayed you.

Even if you feel weary and weak, your body is strong—because it has kept you alive this long. It is working hard for you, just waiting for the day when you discover the secrets of how to heal. You deserve to get back behind the wheel of your life, to move past the roadblock of illness.

Plan for Wellness

To activate your body's healing potential, try this exercise: make plans for when you're well again. When you're ill, it's easy to despair. Pleasures of life that you once enjoyed are out of reach, and it's understandable if you project your fate into the future, fearing that you've lost those joys forever. Keep a light heart, though. When you find yourself dwelling in that place of worry, gently guide yourself to reorient your thoughts.

Picture the sights you want to see, the hobbies you want to explore, the passions you can't wait to rediscover. Read books about your interests, visit favorite websites, talk to friends and family about the fun you'll have. Make lists of all your plans. Accept the present as best you can, then meditate on your future freedom.

You aren't sick because you've had the "wrong" mindset. Getting better isn't just a matter of positive thinking. If you practice this powerful exercise regularly, though, you'll prime your body to respond to the steps you take toward getting better, and to sustain you on your healing journey.

Go Wild To Thrive

The world is moving faster than ever before. Some of it is amazing: the miracle of robotic surgery, the blessing of instant communication with a loved one who's halfway around the world. And then there are the downsides: pollution, pathogens, distraction, overwhelm. At the same time you're listening to a news report on rising sea levels, you're fielding text messages about a computer virus at your child's school—and then a phone call comes in about a dear friend's frightening diagnosis. 

I call our current era the Quickening. With everything speeding up, expectations are at their highest for humankind—and women especially bear the brunt. It can feel impossible to stay on top of it all, to protect yourself and your family. It can feel like a struggle to survive every day. And yet we don't just want to survive, do we? We want to thrive.

In order to adapt and thrive in our changing times, it's imperative to remember that no matter what else is trying to grab our attention, health is key. Think of today's cars. They're really advanced, right? Equipped with GPS, Wi-Fi, solar panels, remote starters, and cameras that show you your blind spots, these automobiles are like spaceships! They're incredible. We hear that soon, they'll even be driving themselves. 

Yet every car has a major vulnerability: rubber tires filled with air. No matter how decked out the body of a car is, if it runs over a bed of nails, the tires will deflate, and it will be stuck by the side of the road. While the design of pneumatic tires has improved since their invention in the 19th century, there has yet to be a total turnaround in the conception of how cars get from Point A to Point B.

That's where we are as a society, too. While certain areas of life have seen exponential growth, we're still vulnerable at our foundation. Potential dangers are everywhere: Toxins fall from the sky and fill the air we breathe. Radiation surrounds us from past nuclear disasters. Superbugs multiply, out of control. Adrenaline surges from the stress of it all. Disease is on the rise. Our personal and global achievements—just like those features on the latest cars—are only as fruitful as what they're built on: our health.

If we end up sick in bed because life in the 21st century pushes our bodies past their limits, then what good are the advancements? Whether you're low on energy, struggling with illness, or perfectly well, you must take active measures to safeguard your health.

Here's one secret: eat wild foods. These humble edibles are packed with adaptogens—that is, they're crucial to helping our bodies adapt to what life throws at us. Wild foods not only retain the vitamin and mineral levels that nature intended, they also carry critical survival information in their cells. When we ingest them, the wisdom that's allowed them to thrive out in the elements becomes a part of us.

You don't have to spend all of your time foraging in pristine locations to eat wild. And you don't have to be distracted by the trends advertising the latest exotic, expensive superfood. Wild foods (or foods so close to their wild form that they provide the same benefits) are actually waiting for you at your local market, and they can transform your health. Here are three of the best wild and near-wild foods you can add to your routine to protect yourself:

Wild blueberries: These little gems are the top health tonic you can find. Turn to wild blueberries for immune system support, tissue repair, anti-aging, digestive cleansing, ADHD management, extraction of heavy metals from your system...the list goes on. You also want these in your toolkit for prevention of brain diseases such as Alzheimer's. Perfect in smoothies, wild blueberries are frequently found in the frozen section of your local grocery store. (Don't confuse them with their cultivated cousins, which are larger, slightly lighter in color, and still healthy, just not anywhere near as life-changing.) 

Nettle leaf: Amazing for detoxification, headache relief, and support of the endocrine and central nervous systems, nettle is one of the best herbs for healing and prevention, period. Turn to nettle for alleviation of chronic fatigue, joint and muscle pain, and emotional distress. Its anti-inflammatory properties are astounding, and its vital micronutrients make it an essential part of your regimen. Nettle leaf is readily available as a tea herb, or as a tincture.

Dandelion greens: The tenacity that makes dandelions a rampant weed is about to make it your new best friend. Rich in protein, dandelion greens are wonderful for cardiovascular support, cleansing the blood, fighting off bugs, and remineralization. They're also a fantastic anti-radiation remedy. Add dandelion greens to stir fries and salads. You can harvest them locally if you're sure they're from a lawn or garden that hasn't been sprayed with herbicides or pesticides. Otherwise, find fresh dandelion greens in your grocery store's produce section, or buy it dried and brew dandelion tea.

Other items you can throw into the mix include thyme, oregano, rose hips, Atlantic dulse, and all (edible) varieties of wild berries. You won't hear lots of buzz out there about the miraculous health benefits of these foods—yet. Rest assured, though: if you make them a regular part of your life, incorporating at least one (preferably more) into your daily rotation, you will be taking the most powerful step you can to defend your health.

How To Trust Again

I wouldn't be surprised if you could pinpoint a moment this week—today even—when someone or something you trusted let you down. Maybe you were counting on your spouse to pick up the kids from school, and you got the last-minute text: "Meeting came up. Can't make it." Or you were relying on your body to be well enough for a weekend getaway, but a migraine took hold, and you had to cancel.

Trust is the soul's precious currency. It's the gold that allows us to take risks, to reach out and grab opportunities. Trust is what lets us live and love. And yet every day, we face situations that threaten to bankrupt us. Appliances break, friends divulge our secrets, disasters play out before our eyes on the news. What we counted on falls through, and there goes some of our trust in the world. Distrust, mistrust, suspicion, skepticism, wariness, misgiving, fear, sadness, anger, lack of confidence: these shades of doubt are all signs of a trust debt. And we all risk being overdrawn—if we don't take care to replenish our trust reserves.

The Trust Bank

An experience early in life—perhaps you were that kid standing alone on the curb at school, long after all your classmates had gotten picked up—prompts an initial loss of innocence. From there, the soul's bank of trust can continue to dwindle. If your car breaks down, not only will you have to pay cash to get it repaired, you'll also likely have to cough up some trust: in the future, you may have your guard up every time you get in the car. Or maybe you suffer from mystery aches and pains. You visit doctor after doctor in search of answers, get a label like "chronic fatigue syndrome," yet still struggle to make it through each day. On some level, you may feel that your body has let you down, and you'll likely feel poorer for it.

You don't have to live like this, always losing trust and never gaining it. Think of the way your finances work. In order to avoid going broke, you don't cut off spending altogether. If you did that, you wouldn't be able to buy food or a pay for a place to live—you wouldn't be able to survive. Instead, you aim for a flow of cash. While money is going out of your account, you (and/or your partner) also earn income.

It works the same way with trust. If we cut ourselves off from trusting entirely, we'd cut ourselves off from life. Every single human interaction requires trust. Plus it takes trust to cross the street, to eat food you haven't grown and processed yourself, to heal…And so we need to bring trust into our lives, too. There's a powerful way to fill up your soul with its natural resource, and it's available to you every day.

Sunset, Sunrise

Every evening, the sun goes down. Every morning, the sun comes up. This has happened each day of your life, and it will continue to happen every single day until you move on from this earth. You can put all of your trust in this fact. It will never betray you. Regularly meditating on this can change your life.

Here's what to do: as often as you can—whether that's once a week, three times a week, or every day—pay attention to the sunset. (Don't sun-gaze, though—that will damage your eyes.) For those few moments while the sun is going down, be present. You don't have to be on the beach, witnessing the most beautiful sunset of your life. You don't even have to be able to see the sky. You could be at your desk at a cubicle in a high-rise, with a calendar reminder on your computer as the only clue about what's happening outside. No matter. Just turn your mind to the setting sun. Remind yourself that the sun will return tomorrow. You can always count on the coming sunrise; it will never let you down. It's never going to stop rising.

Now, why am I not telling you instead to set your alarm every morning for the sunrise? It would certainly be a good meditation. It just wouldn't be the meditation to rebuild trust. Focusing on the sunset is key, because you're facing the darkness. It takes great faith to meet the fading light with the irrefutable conviction that it will not be gone forever. It trains your soul to have equal faith in life itself, to endure uncertainty and letdowns with grace and confidence, even to see the beauty in those periods of waning light. When you turn your mind to the sunset, you attune your body to the earth's rhythms, so that when the sun rises the next morning, whether you're awake to see it or not, your soul is aware that something you trusted came through for you.

Unlock Your Potential

For this meditation to have an effect on your life, you have to know why you're doing it. In much the same way that a computer can be surrounded by wireless Internet signals yet remain offline without the right password, the sunsets won't unlock their secrets for us if we don't know how. Knowing that each sunset is about trust is the password. You have to remind yourself every single time that you're doing this so you can become wealthy in trust.

Then, untold wonders can occur. You can experience the good in the world again—because there is good out there, so much good. You'll no longer have to live in fear, disappointment, and deprivation. Your body's healing mechanisms can reactivate. You'll feel secure enough to spend your trust on the risks that lead to your divine purpose on this earth, to seize the chances to become your truest self. 

So go ahead and get started with this simple ritual of observing the sunset. I'm so excited for you to unlock your unique and extraordinary potential.

Sweet Potato Soup

Now that Autumn is here, it's the perfect time to make the most of the bounty of sweet potatoes, winter squash and pumpkins that are in every grocery store and farmer's market.

Sweet potato is one of the most healing vegetables we have available to us. They help to lower blood pressure and reduce stress. They are one of the best anti-cancer foods, and can particularly help to prevent breast, colon, lung, skin, and oral cancers.

Sweet potatoes are known for being easy to digest and are very good for ulcers, inflamed colons, digestive disorders, and constipation. 

And to top it all off, they taste delicious! Especially in this quick and easy healing recipe. It's perfect for dinner, and pairs wonderfully with a big fresh salad of leafy greens, juicy bell pepper, tomato, cucumber and avocado with a squeeze of orange juice.

Ingredients:

  • 2 sweet potatoes, peeled and cubed 
  • 2 cloves of garlic 
  • 1 medium sweet onion, sliced 
  • 1/2 an inch of fresh ginger root 
  • A pinch of cinnamon, nutmeg, or cardamom and/or sea salt and pepper 
  • Optional topping: coconut or cashew cream and/or rosemary, thyme or parsley

Directions:

  1. Steam the sweet potatoes, onion, garlic, and ginger until soft (about 45 minutes). 
  2. While still hot, transfer to a blender with 1 cup of the steaming liquid. Blend until smooth and creamy. 
  3. If needed you can add a little more of remaining steaming liquid to create the consistency desired for your soup. 
  4. Optionally sprinkle seasoning to taste, and top with fresh herbs such as parsley, rosemary, or thyme and a dollop of coconut or cashew cream.

Garlic

Garlic is one of the world’s oldest medicines and is an incredibly potent spice that can ward off a variety of illnesses and diseases. It has amazingly high levels of vitamins and minerals including vitamin C and B-6 and minerals such as selenium, calcium, and iron. Garlic also contains very strong antibiotic, anti-fungal, anti-cancer, and anti-viral properties.  

One raw crushed clove of garlic contains the antibiotic equivalent of 100,000 units of penicillin and has been proven to be more effective than both penicillin and tetracycline in suppressing certain types of disease carrying agents. Garlic contains a compound called allicin which has been shown to help significantly lower cholesterol and blood pressure by inhibiting the HMG-CoA reductase enzyme within the liver cells and blocking platelet clot formation in the blood vessels. 

Garlic is also very good for the digestive tract and has a strong ability to eliminate toxic matter from the lymphatic system. Garlic’s anti-inflammatory properties make it vital for autoimmune disorders such as rheumatoid arthritis, COPD, lupus, fibromyalgia, lyme disease, bursitis, shingles, and chronic fatigue syndrome. It is also particularly beneficial for ear infections, candida, bronchitis, respiratory infections, food poisoning, herpes, coronary artery disease, stroke, colds, flus, urinary tract infections, and weak immune systems. 

Garlic can help eliminate lead and other heavy metals from the body. It is also a good remedy for removing parasites and worms from the colon. Garlic can be juiced with vegetables for a powerful immune boosting drink. When feeling under the weather consider eating 1-4 cloves of raw garlic a day by adding it to guacamole, soups, hummus, or crushed on toast with a little olive oil.

Thyroid Mechanics

If you or a loved one have been prescribed thyroid medication, I’m sure you hoped that it would bring you relief and recovery from the symptoms you might have been experiencing—symptoms like weight gain, hot flashes, night sweats, dry skin, fatigue, loss of libido, constipation, heart palpitations, insomnia, brain fog, aches and pains, vertigo, depression, anxiety, weight loss, or any of the other unexplained symptoms or illnesses I discuss in my book Thyroid Healing. What Thyroid Medication Really Does

In addition, medical science and research are not aware that the hormones in these medications, whether animal or synthetic, are not totally and truly bioidentical to human thyroid hormones. This means they’re missing key chemical compounds, which have not yet been discovered, that set human thyroid hormones apart. Plus, the thyroxine in thyroid medication fools the pituitary gland by sending it the message that the thyroid is producing enough of its hormones to suit the body.

It’s vital to know this truth: whether a person feels better, worse, or the same on thyroid medication, it is not prescribed for the thyroid itself—it does not heal the thyroid. Most people are not aware of this. They understandably assume that the prescription they received for thyroid medication will be treating the problem itself. Sadly, this is not the case and the real cause of their thyroid problems will be unaddressed, which means their symptoms and illnesses have the potential to worsen over time, and they’ll also be bearing the added load of the thyroid medication on their liver and adrenals.

The answer to this is not to stop taking your thyroid medications cold turkey. There is a safe and proper way to wean off thyroid medications with the help of your doctor, if they feel it’s in your best interests to do so.
