Apple Porridge

There’s something so delightful about starting the day with a simple bowl of hearty goodness that’s specifically geared to help you heal. This flavor-packed Apple Porridge skips the grains for a delicious bowl of fruit-based satisfaction. This recipe comes straight out of my book Thyroid Healing

Apples are anti-inflammatory for the thyroid because they starve the pathogen that causes thyroid problems. When their pectin enters the digestive system, it releases phytochemicals that bind onto the pathogen, shrouding the virus cells so that they can’t feed and proliferate.

Dates contain potassium, magnesium, and glucose that support your endocrine system. Dates help to purge the liver of debris often caused by the waste matter of the pathogen that causes thyroid problems.

Coconut is antiviral and anti-inflammatory. Coconut kills the pathogen's cells and reduces nodule growth. It also helps support the central nervous system from exposure to the pathogen's neurotoxins.

Apple Porridge with Cinnamon & Raisins 

Ingredients:

  • 3 apples, sliced
  • ¼ teaspoon cinnamon
  • 2 dates, pitted
  • ½ lemon
  • ½ cup raisins
  • 1 teaspoon honey (optional)
  • 1 pinch vanilla bean powder (optional) 
  • ¼ cup walnuts (optional)
  • ¼ cup shredded coconut (optional)

Directions:

Combine the apples, cinnamon, vanilla bean powder, dates, honey, and the juice of the lemon in a food processor. Process all of the ingredients together until they are just combined. Pour the apple mixture into a bowl and stir in the raisins, walnuts, and shredded coconut if desired. Serve and enjoy!

Tip:

* Feel free to get creative and figure out what toppings you like the most! Try different toppings on different days to get a variety of nutrients and flavors.

Raspberry Cookies

Healing doesn’t mean that you can’t enjoy a sweet treat when you need one! The Raspberry Thumbprint Cookies I am sharing with you today are delicious and have none of the harmful ingredients often found in some store-bought kinds. The bright pop of raspberry jam nestled in a rich, nutty dough makes these gorgeous cookies a wonderful treat for yourself, to share with friends or family, or pack into your children's school lunchboxes. This Raspberry Thumbprint Cookies recipe comes straight out of my new book Thyroid Healing

Raspberry Thumbprint Cookies

The two star ingredients that address the undiscovered cause of thyroid problems in this delicious recipe are the raspberries and sesame seeds.

Raspberries are a great full-body detoxifying food, rich in antioxidants that specifically help remove byproduct and toxic debris created by the invader that causes thyroid problems. Raspberries also tend to bind onto and remove impurities delivered to the intestinal tract by a liver burdened by this invader. 

Sesame seeds and tahini strengthen the central nervous system while providing amino acids such as tyrosine and lysine in highly bioavailable trace forms that easily enter and uptake into the thyroid to improve the gland’s function and suppress the invader

Ingredients:

Directions:

Preheat the oven to 350°F. Whisk together the almond flour, baking soda, and sea salt in a mixing bowl and set aside.

Process together the tahini, coconut sugar, and vanilla extract in a food processor until smoothly combined. Add the almond flour mixture to the food processor and pulse until well combined. If mixture is still crumbly, add water by the tablespoon as needed until smooth dough forms.

Form the dough into 1-inch balls and roll them in the sesame seeds before placing them onto a baking tray lined with parchment paper. Leave at least 2 inches between the cookies. Press a thumbprint into the center of each cookie and place the cookies into the oven. Bake the cookies for 8 to 10 minutes.

Remove the cookies from the oven and fill each one with 1 teaspoon of raspberry jam. Place the cookies on a wire rack to cool.

Tips:

* If using store-bought jam for filling, make sure to look for a clean one with no added harmful ingredients or preservatives. • 

* To make a homemade raspberry filling, mash fresh, ripe raspberries (or frozen raspberries that have been thawed) with raw honey or maple syrup until desired consistency is reached.

Healing Power of Parsley

Though it could technically be grouped with the other aromatic herbs, parsley is in a class of its own because of its skill at alkalizing all the body systems. You’ve no doubt heard of the concept of body acidity and alkalinity—that when the body becomes acidic, disease can occur. Well, wherever parsley is sold, it should come with a sign that says, “Fights acidosis more than anything else.” Normally, alkalizing foods only have the ability to promote alkalinity in one or two body systems, so other systems can remain acidic. Used appropriately and on a regular basis, parsley can alkalize the entire body, crossing body systems and driving out acidity across the board. (Note that pH strips don’t give you the feedback on body acidity that you may think they do. For more on this, see the “Harmful Health Fads and Trends” chapter.) Mineral salts are a large part of what makes parsley so alkalizing—parsley’s specialized mineral salts bind onto unproductive acids in the body to drive them out. This alkalizing skill makes parsley helpful for preventing and battling every type of cancer. 

The herb is an all-purpose pathogen-fighter; it keeps bacteria, parasites, and fungus at bay. Parsley is amazing for anything mouth-related such as gum disease, tooth decay, and dry mouth, as it impedes the growth of unproductive microorganisms there. It’s also a fantastic anti-DDT weapon—it has a great chelation effect that pulls out stores of herbicides and pesticides such as DDT that you never knew were hiding in your body and holding you back. Parsley is full of nutrition, including B vitamins such as folic acid, traces of B12 coenzymes, and vitamins A, C, and K. It’s also a highly remineralizing food, especially for those low in trace minerals; parsley provides magnesium, sulfur, iron, zinc, manganese, molybdenum, chromium, selenium, iodine, and calcium. 

Parsley is practically a wild food, as it doesn’t need much tending to fare well and provide for you; it can even handle some colder weather, meaning that it has an adaptogenic nature. When you eat it, parsley passes this will to survive and thrive along to you. Parsley is an excellent herb to replenish you when you’re depleted and exhausted. Like licorice root, though it doesn’t usually make the lists of top adrenal boosters, parsley most definitely should.

If you feel like you’re being dragged along on someone else’s emotional roller coaster, offer her or him a dish with parsley in it. When a person gets enough of this herb, you’ll notice a more balanced state of mind and being.

SPIRITUAL LESSON

Too many people miss out on the health benefits of parsley because they’re not wild about the flavor. It’s not an allergy or an intolerance—they just decide to stick with what they know and love. When we don’t like something, even if we know it’s good for us, we tend to avoid it. What experiences, conversations, situations, responsibilities, and actions are you avoiding in your life that would ultimately help you? What valuable lessons are you missing out on? What benefits would you reap if you put aside your initial aversion and approached something you usually think of as unpleasant as an opportunity instead?

TIPS

* One excellent way to enjoy and benefit from parsley is to juice it with celery. The mineral salts in these related herbs work in tandem, with the parsley’s salts binding onto acids such as lactic acid in the body and driving them out while celery’s salts bind onto other sorts of toxins while also feeding and helping to form neurotransmitter chemicals (of which there are many varieties as yet undocumented by medical research).

* You can also make a tea from parsley, using the herb fresh or dried (though preferably fresh).The infusion process is a great way to extract the maximum amount of trace minerals and phytochemicals hidden deep within parsley, so that you can absorb these nutrients.

* For maximum benefit, seek out flat-leaf parsley. (Curly-leaf parsley still has great value, so don’t skip it if flat-leaf isn’t available.)

* Get into the habit of adding parsley to everything, whether you like the herb or not. At a certain point, habit will take over, and in the end, you’ll at least be using parsley in one meal a day. If you’re averse to parsley, experiment with it in various preparations (juiced, chopped and sprinkled on salad, blended into a smoothie, made into tea, and so on) until you find one you can tolerate. Then you can reap parsley’s nutritional benefits while it also pushes out what shouldn’t be in your system.

PARSLEY TABBOULEH

This salad is the perfect addition to a big meal eaten around the table with family and friends. It pairs perfectly with hummus and a platter of roasted cauliflower. Traditionally, tabbouleh is eaten inside tender lettuce leaves. Serve it in a huge bowl and use your hands to scoop it up with lettuce cups. Enjoy the tradition of gathering together around this beautiful meal.

  • 1/4 cup almonds
  • 4 cups parsley, tightly packed
  • 1⁄8 cup mint, loosely packed
  • 2 cups quartered tomatoes
  • 2 cups quartered cucumber
  • 1/2 cup chopped red onion
  • 1/4 teaspoon sea salt
  • 1 teaspoon olive oil
  • 1/2 lemon, juiced

Pulse 1/4 cup almonds in a food processor until roughly chopped. Set aside. Place 4 cups parsley in a food processor and pulse until finely chopped. Set aside. Place the remaining ingredients in a food processor and pulse until chopped and well combined. Transfer the mixture to a large bowl. Add in the parsley and almonds and mix together. Serve and enjoy!

Honey Peach Pie

Peaches are a wonderfully hydrating and mineral rich fruit that are easy to digest and rich in beta-carotene, vitamin C, iron, calcium, magnesium, zinc, and bioflavonoids. It’s hard to improve upon the simple perfection of a peach, but this recipe is a great way to change things up. A coconut date crust studded with lemon zest and mint encases a sunrise of sliced peaches tossed in honey. Enjoy this one out on the porch during those long summer evenings surrounded by friends and family.

Ingredients:

Directions:

  1. For the crust, place the dates, shredded coconut, mint leaves and lemon zest into a food processor and pulse until well combined.
  2. Press the crust mix firmly into the bottom of a 9-inch pie pan. Place the crust in the freezer for 30 minutes.
  3. Peel and slice all 6 of the peaches into a medium bowl.
  4. In a small bowl, whisk together lemon juice and honey until combined. Pour over the peaches and toss gently to coat.
  5. Arrange the peaches in the pie crust and serve!

Yields one 9-inch pie.

Mango Tart

  1. For the crust, place the dates and mulberries into the food processor and process until well combined.
  2. Press the crust mix firmly into the bottom of an 8-inch tart pan. Place the tart pan in the freezer for 30 minutes.
  3. To make the filling, blend the mango, lime juice and (if you’re feeling adventurous) the curry powder together until smooth.
  4. Pour the blended mango filling into the pie crust and allow to set in the freezer for 15 more minutes.

Yields one 8-inch tart.

Wild Blueberries

It’s easy to get swept up in the belief that the ultimate healing food is hiding somewhere in the tropical wilds. We read about researchers who scour the jungle for miracle roots and berries, and we see exotic dried fruits for sale at the grocery store with packages proclaiming them “superfoods.” Maybe one day, we tell ourselves, a true miracle food will be discovered out there in the rain forest—the root or berry or herb or nut that will save humanity. TIPS

Often the easiest place to find wild blueberries is in the frozen-food aisle at the local supermarket, in the cases that carry smoothie ingredients. As I said above, freezing makes the berries even healthier. To enjoy them, either whip them up into a frozen treat, or thaw and enjoy. Frozen wild blueberries blended with frozen bananas make a delicious and wholesome-beyond-belief ice cream.

* If you’re in the United States, seek out frozen or fresh wild blueberries from Maine. If you’re in Canada, seek out those from eastern Canada. If you live in another country, don’t underestimate the wild blueberries that may be growing in your region; they hold miraculous benefits that far exceed those of any cultivated blueberry.

* If you know someone who’s challenged by an illness, offer her or him wild blueberries to show your goodwill.

* When you eat wild blueberries, make a mindful note that they’ve been graced by God and the universe, that they are a gift from above.

Strawberry Pistachio Pie

While pistachio might not be your first thought when it comes to making a raw pie crust, you will not be able to get enough of this amazing pie once you try it. Ingredients:

Directions:

  1. For the crust, place the pistachios, dates, shredded coconut, sea salt, lemon zest and basil leaves into the food processor and process until well combined.
  2. Press the crust mix into the bottom of a 9-inch pie pan. Place the crust in the freezer for 30 minutes.
  3. Slice strawberries in half and place into a large bowl. Toss gently with lemon juice and place into the fridge for 20 minutes.
  4. Remove strawberries from the fridge, drain off excess liquid, toss gently with honey. Pour the strawberries into the pie crust and serve topped with extra honey if desired.

SPIRITUAL LESSON

If you could trace your family lines back to their oldest days, you would find ancestors who subsisted on honey. Raw honey was not a survival food in the sense that it simply got people by until something better came along. Rather, it was (and still is) incredible medicinal nourishment. Honey is written into our lineage. Who we are—our souls, our DNA—in a sense derives from honey. This means that if we avoid honey, we’re shutting off a part of ourselves that connects all the way back to the beginning of human life. Trends that cut us off from honey go to show how disconnected we can really become. Connecting with honey puts us back in touch with ourselves. It prompts us to ask what else we’ve turned a cold shoulder to that made us who we are today. What else deserves reevaluation?

TIPS

* Add raw honey to lemon water to enhance the honey’s bioflavonoids and give the drink an additional immune boost.

* If you feel like you’re coming down with something, take a teaspoon of raw honey before bed. This is also a good remedy to enhance a night’s sleep.

* Use raw honey in place of all processed sugar and other sweeteners you normally use. Look for wildflower honey, if you can find it.

* Applied externally, honey is great for healing small wounds and revitalizing the skin. Try it on scars where you want to speed up the healing process.

* Consuming honey prior to meditation strengthens the mind and brings about happy sensations throughout the body.

HONEY-COCONUT ICE CREAM

Fair warning: This ice cream recipe is dangerously good. It only takes a few minutes to prep with an ice cream maker, and in under an hour, you can have ice cream that is cleaner and way more delicious than anything available in the store. As a bonus, you’ll have some leftover almond milk that you can use in smoothies or enjoy cold from the fridge.

  • 1 cup almonds
  • 2 dates, pitted
  • 1/4 inch vanilla bean, split lengthwise
  • 1 1/2 cups coconut cream (from approximately 2 13.5-ounce cans of refrigerated full-fat coconut milk)
  • 1⁄8 tsp sea salt
  • 1⁄8 cup raw honey
  • 1/4 cup chopped almonds (optional)

First, make the almond milk by blending the almonds, dates, and scraped seeds from the vanilla bean with 2 cups of water until smooth. Strain the mixture through a nut milk bag or cloth and set aside. Then, open the cans of coconut milk, being careful not to shake them. Separate off the heavy cream from each can. (See the Berries and Cream recipe for guidance.) In a medium bowl, mix the coconut cream with 1 cup of almond milk, sea salt, and raw honey until combined. Pour into the bowl of an ice cream maker and process according to the manufacturer’s instructions.* Serve the ice cream topped with chopped almonds, if desired, and a drizzle of raw honey.

*Without an ice cream maker, freeze the mixture in a bowl and stir every 30 minutes until set.
