Chopped Salad

This pretty Chopped Salad looks beautiful and tastes delicious thanks to the brightly colored array of fresh fruits, leafy greens, herbs, and vegetables it showcases. It’s also easy to customize with your own favorite fresh produce picks. A fun way to serve this salad to others is as a build-your-own salad bar so each person can create their own style of chopped salad. This recipe comes from the Revised and Expanded Edition of Medical Medium.

Leafy greens create true alkalinity in the body systems, especially the lymphatic, which can become the most acidic system. Medical communities are unaware that alkalinity of the blood, organs, endocrine system, reproductive system, and central nervous system hinges completely on the lymphatic system being alkaline. Leafy greens help to expel, purge, and drain the lymphatic system of these toxins so that it can remain alkaline.

Cucumbers support digestion; they contain undiscovered coenzymes that will one day be called talafinns. Alongside enzymes that have been discovered by medical research (such as erepsin), talafinns help the body’s protein digestion process so you can get the most out of everything you eat.

The fruit acids in tomatoes help keep the gallbladder healthy, helping rid sludge from the gallbladder and even reduce gallstone size.

Chopped Salad

Ingredients:

  • 4-6 cups chopped leafy greens (such as spring mix, arugula, lettuce, or kale)
  • 2 cups chopped cucumber
  • 1/2 cup chopped green onions
  • 2 cups chopped tomatoes
  • 1 tsp Atlantic dulse flakes (or more, to taste)
  • 3 tbsp freshly squeezed orange juice
  • 2 Medjool dates, finely chopped (optional)
  • 1/2 avocado (optional; leave out if fat-free)
  • 1 cup chopped yellow, orange, and/or red bell peppers (optional)
  • 1/4 cup finely chopped dill, basil, cilantro, thyme, and/or parsley (optional)

Directions:

Place the leafy greens, cucumber, green onions, tomatoes, Atlantic dulse flakes, orange juice, Medjool dates (if using), avocado (if using), bell peppers (if using), and herbs (if using) in a large bowl.

Toss until evenly combined and serve immediately.

Serves 1-2
