Rosemary Potato Flatbread

This flatbread tastes amazing and is incredibly versatile. Rosemary Potato Flatbread

Ingredients:

  • 2 lbs potatoes, roughly chopped
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • ½ tsp paprika
  • ½ cup cassava flour
  • ⅓ cup potato starch, more if needed
  • 2-3 tbsps chopped rosemary

Directions:

Add 3 inches of water to a medium pot, insert a steaming basket, add the potatoes, and cover. Steam the potatoes for 20 to 25 minutes until soft. Remove the potatoes and place them in a bowl or pot together with the onion powder, garlic powder, and paprika. Mash until smooth. Set aside for 10 minutes to cool.

Preheat the oven to 400°F/200°C. Line a baking sheet with parchment paper. Add the cassava flour and potato starch to the mashed potatoes, and knead until you get a soft dough that isn’t sticky, adding more potato starch as needed.

Place the dough on the prepared baking sheet and spread out evenly to about 1⁄2 inch thick. Sprinkle the rosemary on top and press it in slightly. Bake for 25 to 35 minutes until browned on top. Cool for 15 minutes before slicing.

Tips:

  • Feel free to swap out the rosemary for a different herb if you’d like, such as thyme, parsley, oregano, or sage.
