Sweet Potato Rounds
You can’t go wrong with these delicious Sweet Potato Rounds. They’re a perfect side dish to accompany any meal or to pair with a big salad. You may find this recipe becomes a part your weekly lunch or dinner rotation.
Sweet Potatoes are an incredibly nutritious food that are packed with antioxidants like beta carotene, vitamins C, E & D, and minerals such as manganese and iron. They are also high in potassium which helps to lower blood pressure by removing excess sodium and regulating fluid balance in the body. Sweet potatoes are an excellent anti-stress food and are known to help relax muscles, steady nerves, and balance cognitive function.
They are also one of the best anti-cancer foods and can particularly help to prevent breast, colon, lung, skin, and oral cancers. Sweet potatoes are known for being easy to digest and are very good for ulcers, inflamed colons, digestive disorders, and constipation. Sweet potatoes contain compounds called phytochelatins that can bind to heavy metals such as lead, mercury, copper, & cadmium and safely remove them through the body.
Sweet Potato Rounds
Ingredients:
- 4 medium-sized sweet potatoes, scrubbed and cut 1 1/2 inch thick
- 1 tsp olive oil
- 1 tsp garlic powder
- Sea salt, to taste (optional)
- 1/4 cup fresh parsley, roughly chopped
Directions:
Place the sweet potatoes in steamer or colander set over a pan of boiling water. Cover with a lid and steam for 15-20 minutes until tender. Remove and set aside until cool enough to handle.
Preheat oven to broil/grill on high heat. Line a baking tray with parchment paper and place the sweet potatoes on top. Use a fork or the bottom of a flat glass to lightly flatten the sweet potatoes. Brush with olive oil, then sprinkle with garlic powder and sea salt (if using).
Broil (or grill) the sweet potatoes in the oven for until slightly browned and crispy, about 15 minutes. Remove from the oven and top with fresh parsley. Serve immediately.
