Coconut whipped cream:
Combine all ingredients except the whipped cream and cherries in a high-powered blender. Blend until smooth and creamy. Taste to add more maple syrup, if needed.
To make the coconut whipped cream, chill coconut milk or cream in the fridge overnight. Once cold, open the can and transfer only the thick and creamy part to a bowl (discard the watery part).
Combine coconut, maple syrup, or vanilla bean powder and vanilla bean powder or extract.
Using either a standard mixer or hand beater, whip the cream until it is the texture of whipped cream.
Pour shake into 2 glasses, and serve. Top with coconut whipped cream and cherries.
