These pretty purple pancakes are so fun and tasty to eat. The purple color comes from antioxidant-rich wild blueberry powder, not from food colors and dyes. Place the oats, baking powder, wild blueberry powder, applesauce, almond milk or water, maple syrup, and cinnamon (if using) in a blender and blend until smooth. The batter should be thick but pourable.
Preheat a large non-stick ceramic frying pan over medium-low heat. Scoop 1/4 cup of the batter and cook for 2 to 3 minutes on one side, until bubbles form on the surface, then flip and cook for a further 30 seconds.
Serve pancakes immediately, topped with berries and maple syrup (if using).
