Potato Lettuce Sandwiches

These lettuce sandwiches really hit the spot when you’re looking for a fresh and simple option. Load up your layered lettuce leaves with potato slices, fresh tomato, onion, cucumber, and radish, all topped off with mustard and/or ketchup.

Potato Lettuce Sandwiches

Ingredients:

Potato Slices:

  • 2-3 medium potatoes
  • 2 tsps garlic powder
  • 2 tsps onion powder
  • 2 tsps paprika
  • 2 tsps dried oregano or basil
  • ½ tsp chili powder

To Serve:

  • 8-12 green or red leaf lettuce leaves
  • 2-3 tbsps Potato Mustard (optional)
  • 2-3 tbsps Ketchup (optional)
  • ½ cup thinly sliced tomato
  • ⅓ cup thinly sliced onion
  • ½ cup thinly sliced cucumber (optional)
  • ½ cup thinly sliced radish (optional)
  • ½ cup sprouts or microgreens (optional)

Potato Mustard (Optional):

  • ½ cup peeled and diced steamed potato
  • 2 tsps mustard powder
  • ½ garlic clove, roughly chopped
  • ⅛ tsp ground turmeric
  • 3 tbsps lemon juice
  • 2 ½ tbsps raw honey
  • 1 tbsp water

Ketchup (Optional):

  • 3 ounces tomato paste
  • ¼ tsp onion powder
  • ¼ tsp garlic powder
  • ¼ tsp dried oregano
  • ¼ tsp cayenne (optional)
  • 3 tbsps apple juice
  • 1 tbsp freshly squeezed lemon juice
  • 1 tsp raw honey

Directions:

Add 3 inches of water to a medium pot, insert a steaming basket, add the potatoes, and cover. Steam the whole potatoes 40 to 50 minutes until soft. Remove and cool completely.

Slice the potatoes into thin slices lengthwise and place on a cutting board or platter in a single layer. Sprinkle spices and herbs generously on top.

To make the optional Potato Mustard, combine the mustard ingredients in a blender and blend until smooth. Serve immediately, or keep refrigerated until needed.

To make the optional Ketchup, combine the ketchup ingredients in a small bowl and whisk until evenly mixed and smooth. Serve immediately, or keep refrigerated until needed.

To assemble the sandwiches, layer 2 to 3 lettuce leaves on top of each other to create a sturdy base. Add a few potato slices, ketchup and/or mustard (if using), tomato, onion, and the cucumber, radish, and/or sprouts or microgreens (if using). Place another 2 to 3 lettuce leaves on top. Repeat with the remaining ingredients and serve immediately.
