A beautiful classic you can enjoy any time of the day. This salad is beautiful in its simplicity and with few ingredients, it’s also quick and easy to make. It’s a great option to serve up as a side or starter on any lunch or dinner table with family and friends. It is also an easy and beautiful addition to holiday meals. You can enjoy this salad with your choice of nuts or make it fat-free by excluding them.
Pears act as an anti- spasmodic; help to soothe the linings of the stomach and intestinal tract; feed beneficial bacteria; starve and kill unproductive bacteria, recently contracted parasites, and unproductive fungus; raise hydrochloric acid in the stomach; help prevent intestinal and stomach cancers; and reduce the bad acids produced by mucus and pathogens such as H. pylori. They also restore linings in the gut that have become damaged and calloused from bacteria.
Pear Arugula Salad
Ingredients:
- 3 cups tightly packed fresh arugula
- ¼ cup dried cranberries (oil-free and with no added sugar, flavors, or citric acid) or substitute with raisins or pomegranate arils
- ¼ cup raw walnuts or pecans (optional)
- 1 ripe pear, thinly sliced
- 2 tbsps fresh lemon juice
- 1 tbsp raw honey
- ⅛ tsp mustard powder
- ½ small clove garlic, finely grated or minced (optional)
Directions:
Place the arugula, dried cranberries (or your chosen substitute), and raw walnuts or pecans (if using) into a large serving bowl or platter. Gently toss to combine the ingredients. Arrange the sliced pear over the top of the mixed salad.
In a small bowl, whisk together the lemon juice, raw honey, and mustard powder until the dressing is smooth and well blended. If desired, add the finely grated or minced garlic, if using. Drizzle the dressing over the salad just before serving and enjoy immediately.
