Fresh and bright, this attractive salad offers a bit of everything: tender greens, crunchy radishes, juicy tomatoes, creamy potatoes, succulent green beans, savory olives, and fragrant fresh herbs—all covered in a slightly sweet, slightly tangy dressing.

Potatoes have extremely easily assimilable protein. They’re also rich in minerals such as potassium as well as the amino acid L-lysine to help reduce inflammation caused by pathogens.

Green beans are very gentle on the stomach, making them an especially good choice for anyone with a sensitive gut.

Niçoise Salad

Ingredients:

  • 1 pound baby potatoes, halved
  • 1 cup green beans, trimmed
  • 4 cups tightly packed leafy greens, such as mâche, arugula, or butter lettuce
  • 1 ½ cups cherry tomatoes, halved
  • ½ cup thinly sliced radish
  • ¼ cup pitted olives (oil-free and citric acid– free; optional; leave out for fat-free)
  • ¼ cup loosely packed basil leaves, roughly chopped
  • 2 tbsps loosely packed fresh thyme leaves

Dressing:

  • 2 tbsps freshly squeezed lemon juice
  • 1 ½ tbsps raw honey
  • 1 tsp fresh thyme leaves or ½ teaspoon dried
  • ¼ tsp mustard powder
  • ½ tbsp finely chopped shallots (optional)

Directions:

Add 3 inches of water to a medium pot, insert a steaming basket, add the potatoes, and cover. Steam for 15 to 18 minutes until tender. Remove the potatoes and cool.

Add 3 inches of water to a medium pot, insert a steaming basket, add the green beans, and cover. Steam for 4 to 5 minutes until bright green and tender. Remove and cool.

Whisk together all the ingredients for the dressing.

Arrange the leafy greens, potatoes, green beans, cherry tomatoes, radishes, olives (if using), basil, and thyme on plates. Drizzle the dressing over the salad and serve.

Serves 2

Tips:

  • For a fat-free recipe, omit the olives. If you do choose to include the olives, look for sun-dried botija olives or another variety that doesn’t contain any oil, citric acid, or table salt.
