Delicious baked donuts coated in maple sugar offer a wholesome option for those looking for a sweet treat that doesn’t have the health drawbacks of fried donuts. These donuts are also gluten-free, dairy-free, and egg-free, and are made with coconut oil instead of low-quality oils like canola and vegetable oil.
For the donuts:
Preheat oven to 350F/180C. Lightly grease a 6-donut pan. Set aside.
In a medium-sized bowl, whisk together the ground flaxseeds and water. Set aside for 5 minutes for the flaxseeds to expand.
Add in the almond milk and coconut oil. Whisk until uniform. In another bowl, add the oat flour, brown rice flour, baking powder, maple sugar and cinnamon. Whisk until uniform and lump-free.
Pour the wet ingredients into the dry. Stir until evenly mixed. Spoon or pipe the batter into the greased donut pan.
Bake for 12-14 minutes until lightly browned on top and toothpick inserted comes out clean.
Cool for 5 minutes in the donut pan, then move to a wire rack and cool completely.
Lightly brush each of the donuts with melted coconut oil and dip in maple sugar until evenly coated or alternatively spread maple cream over each donut.
Best enjoyed on the day of baking and kept in an airtight container until needed.
