This deliciously sweet and creamy drink feels decadent and rich, while also feeling refreshing due to being served ice cold. This very popular drink from Spain can be made with tiger nuts or sesame seeds. It makes for a fun treat to enjoy at a social gathering on a hot day.
Horchata De Chufa
Soak the tiger nuts or sesame seeds in water at room temperature for 4-6 hours, best overnight. Drain and rinse.
Combine the soaked nuts/seeds, water, cinnamon (if using), and dates (if using) in a blender. Blend until very smooth, about 3-4 minutes.
Strain through a nut milk bag. Serve immediately or keep refrigerated in an airtight container for 2-3 days until needed.
