This colorful salad is a sensory delight for the eyes and taste buds. It’s beautiful, delicious, and aromatic. Enjoy it with the olives and avocado for a more filling option, or enjoy it without them for a fat-free meal that’s also satisfying.

Tomatoes harness critical micronutrients, phytochemicals, vitamins, and minerals to support all organs of the body.

Cucumbers’ traces of the amino acids glycine and glutamine, combined with their extreme and highly active content of enzymes and coenzymes, plus their abundance of more than 50 trace minerals, make them an excellent delivery system for neurotransmitter chemicals. Greek Salad

Ingredients:

  • 3 tbsps freshly squeezed lemon juice
  • 1 tbsp raw honey
  • 1 garlic clove, finely grated
  • 1 ½ cups diced cucumber
  • 1 cup orange cherry tomatoes, halved
  • 1 cup red cherry tomatoes, halved
  • ¾ cup diced avocado (optional)
  • ½ cup diced red bell pepper
  • ½ cup diced yellow bell pepper
  • ½ cup thinly sliced red onion
  • ½ cup raw pitted botija olives (optional)
  • 2 tbsps fresh oregano leaves or 2 tsps dried
  • 2 tbsps fresh thyme leaves or 2 tsps dried

Directions:

Place the lemon juice, raw honey, and garlic in a large bowl. Whisk until well combined. Place the cucumber, cherry tomatoes, avocado (if using), bell peppers, onion, botija olives (if using), oregano, and thyme in the bowl and toss to combine. Serve immediately.
