This gingerbread cake is the perfect treat for a healthy holiday season as it's gluten-free, dairy-free, egg-free, & fat-free! Packed with warming spices like ginger, cinnamon, nutmeg, and cloves, gingerbread cake is a well loved tradition that bring a lot of joy, warmth, and comfort to the holiday season.

One of ginger’s special qualities is its ability to bring the body out of a reactive state by soothing nerves and muscles. Ginger helps bring balance and homeostasis, which is a wonderful aid during stressful times like the holiday season can be.

Gingerbread Cake

Ingredients:

  • 2 cups gluten-free oat flour
  • 1 cup brown rice flour
  • 1 cup coconut sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 ½ tsp ground cinnamon
  • 1 ½ tsp ground ginger
  • ¼ tsp ground cloves
  • ¼ tsp ground nutmeg
  • ¼ tsp ground cardamom
  • 1 ¼ cup water
  • ½ cup unsweetened applesauce
  • 3-4 tbsp maple syrup, for glazing
  • ¼ cup pomegranate arils, to serve (optional)

Directions:

Preheat your oven to 350°F (180C). Line a 9-inch brownie pan with parchment paper.

In a large mixing bowl, combine gluten-free oat flour, brown rice flour, coconut sugar, baking powder, baking soda, ground cinnamon, ground ginger, ground cloves, ground nutmeg, and ground cardamom. Mix well to ensure even distribution of the dry ingredients.

In a separate bowl, mix water and unsweetened applesauce. Stir until well combined. Gradually add the wet ingredients to the dry ingredients, stirring continuously to avoid lumps. Mix until you achieve a smooth batter. Pour the batter into the prepared 9-inch baking pan. Smooth the top with a spatula for an even surface.

Bake in the preheated oven for approximately 40 minutes or until a toothpick inserted into the center comes out clean. Allow the gingerbread cake to cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely.

Once the cake has cooled, brush maple syrup liberally on top. Slice and serve. Top each slice with a few pomegranate arils (optional).
