If you’ve never roasted radishes before, you’ll be surprised at how good they are. Some herbs, garlic, and a squeeze of fresh lemon juice are all that’s needed to make the radishes shine in this simple dish. Roasted radishes are great as a side or tossed warm or cold into a salad.
The organosulfides in radishes keep arteries and veins clean, creating a protective barrier in blood vessels so plaque doesn’t adhere to their linings. Radishes are incredible heart food, excellent for helping to prevent heart disease and other cardiovascular issues in part by balancing cholesterol.
Garlic Roasted Radishes
Ingredients:
Directions:
Preheat the oven to 400°F/200°C. Line a baking sheet with parchment paper.
Add the halved radishes, garlic, lemon juice, dried herbs, black pepper (if using), and sea salt (if using) to a large bowl. Stir until the radishes are evenly coated.
Place onto the prepared baking sheet and spread into an even layer. Bake for 30 to 40 minutes, stirring halfway, until tender and crispy on the edges. Remove from the oven and cool for 5 minutes. Serve with chopped parsley or chives (if using).
