Fat-Free Oatmeal Raisin Cookies

These chewy cookies with sweet bursts from the raisins are so tasty. They will satisfy a cookie craving while being made with only simple, clean ingredients. They are fat-free, gluten-free, dairy-free, egg-free, and oil-free. Enjoy these cookies right away or pack them into lunchboxes for the whole family for an easy on-the-go snack.

Raisins can easily be ignored or forgotten, but they actually offer wonderful health benefits and in fact offer greater nutritional might than the goji berry, which is promoted as a superfood.

Fat-Free Oatmeal Raisin Cookies

Ingredients:

  • 1 cup gluten-free rolled oats
  • 1 ½ cups gluten-free oat flour
  • 2 tbsp coconut sugar
  • ½ tsp baking powder
  • ½ tsp baking soda
  • 1 tsp cinnamon
  • ⅓ cup applesauce
  • ⅓ cup pure maple syrup
  • ½ cup raisins or sultanas

Directions:

Preheat your oven to 350°F (180°C). Line a baking sheet with parchment paper.

In a large mixing bowl, combine the gluten-free rolled oats, oat flour, coconut sugar, baking powder, baking soda, and ground cinnamon. Mix well.

Add the applesauce and pure maple syrup to the dry ingredients. Mix until all ingredients are well combined and a cookie dough forms.

Gently fold in the raisins or sultanas until evenly distributed throughout the cookie dough.

Using a cookie scoop or a spoon, drop rounded portions of dough onto the prepared baking sheet, leaving some space between each cookie. Optionally, use the back of a spoon or your fingers to flatten each cookie slightly, as these cookies do not spread much during baking.

Bake in the preheated oven for 10 to 12 minutes or until the edges are golden brown. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

These cookies taste best the day they were baked but can be stored in an airtight container at room temperature 1 to 2 days.
