Broccoli With Zucchini Ranch Sauce

Light and refreshing, this side dish is a pleasing accompaniment to any meal. Fresh dill and parsley add a pop of flavor and brightness to this recipe.

Broccoli is an all-purpose multivitamin for the body, plus it contains bioavailable trace minerals and other nutrients that enhance all body systems, including the entire immune system. Broccoli With Zucchini Ranch Sauce

Ingredients:

  • 1 large head of broccoli, cut into florets

Ranch sauce:

  • 3 cups raw, peeled, and diced zucchini
  • 3 tablespoons freshly squeezed lemon juice
  • 1 ½ tbsps onion powder
  • 2 tsps garlic powder
  • 1 ½ tbsps finely chopped dill
  • 1 ½ tbsps finely chopped parsley

Directions:

Add 3 inches of water to a medium pot and insert a steaming basket. Add the broccoli, cover, and steam until bright green and tender, 5 to 8 minutes. Remove and place the broccoli in a serving bowl.

To make the ranch sauce, combine the zucchini, lemon juice, onion powder, and garlic powder in a blender and blend until smooth. Stir in the dill and parsley.

Pour the sauce over the steamed broccoli and serve immediately.

Serves 2
