The sulfur in onions makes them wonderful for alleviating joint pain, degeneration, discomfort, and for repairing tendons and connective tissue.

Carrots are a quick liver refueling source of glucose that’s attached to minerals and vitamins.

Potatoes are abundant in amino acids that specifically inhibit viral growth.

Borscht

Ingredients:

  • 1lb white cabbage, shredded or thinly sliced
  • 1lb red beetroots, peeled and grated or finely diced (organic beets are best)
  • 1 large onion, finely chopped
  • 2 medium-sized carrots, peeled and grated or finely chopped
  • 4 garlic cloves, minced
  • 2 medium-sized large potatoes, grated or finely diced
  • 6 cups Healing Broth
  • 1 bay leaf
  • 1-2 tbsp freshly squeezed lemon juice
  • 1-2 tbsp pure maple syrup
  • Sea salt (optional), to taste
  • 2-3 tbsp roughly chopped dill or parsley, to serve

Cashew sour cream:

  • 1 cup raw cashews, soaked
  • 1/3-1/2 cup water
  • 2-3 tbsp freshly squeezed lemon juice
  • 1/4 tsp mustard powder
  • Sea salt (optional), to taste

Directions:

Place a large ceramic non-stick pot on medium-high heat. Add the beets, carrots, and onions. Sauté until the veggies begin to soften, about 8-10 minutes. Add the garlic and potato and sauté another minute, until the garlic is fragrant.

Stir in the broth and bay leaf. Bring the liquid to a boil, then lower the heat and simmer, uncovered for about 20-25 minutes or until the veggies are tender. Add more Healing Broth or water if a thinner soup is desired.

Remove pot from heat and stir in the lemon juice, maple syrup, and sea salt. Taste and adjust the seasoning—the soup should be slightly sweet and sour.

To make the cashew sour cream, combine all the ingredients in a blender and blend until very smooth. Add water as needed to reach a desired consistency.

To serve, divide the soup between serving bowls and top with cashew sour cream (if using) and dill or parsley. Serve immediately.

Serves 4-6
