Barley Grass Coconut Water Popsicles
These delicious popsicles couldn’t be easier to make–simply stir together the ingredients, pour into popsicle molds, and freeze. They’re sweet, packed full of the glucose our bodies and brains thrive on from the coconut water, raw honey, and raspberries, and the minerals we need from the barley grass juice powder plus the lemon or lime juice.

Barley Grass Coconut Water Popsicles
Ingredients:
- 2 cups coconut water
- 1 tsp barley grass juice powder
- 2-3 tbsps raw honey
- 1-2 tbsps freshly squeezed lemon or lime juice
- ⅓ cup raspberries
Directions:
In a medium-sized jug, combine the coconut water, barley grass juice powder, lemon or lime juice, and raw honey and whisk until uniform.
Divide the raspberries between popsicle molds, then pour the coconut water mixture on top. Cover with the lid and/or insert a popsicle stick in each pop. Freeze the pops until solid.
Serves 6-8
