Banana Strawberry Baked Oatmeal
Ingredients:
- 2 ripe bananas, mashed, plus extra banana slices for topping if desired
- 1½ cups (12 oz) water (purified or spring)
- ¼ cup (2 oz) pure maple syrup, more to serve
- ½ tsp pure vanilla bean powder or pure alcohol-free vanilla extract (optional)
- 1 tsp ground cinnamon
- 2 cups gluten-free rolled oats
- ½ tsp aluminum-free baking powder
- ¾ cup chopped fresh or frozen and thawed strawberries (plus extra for topping if desired)
Directions:
Preheat the oven to 350°F/175°C. Lightly mash the ripe bananas directly in a medium baking dish until mostly smooth. Add the water, pure maple syrup, pure vanilla bean powder or pure alcohol-free vanilla extract, and cinnamon, and stir well until fully combined.
Add the oats and baking powder to the baking dish and stir thoroughly so the oats are evenly coated and the baking powder is well distributed throughout the mixture. Fold in the chopped strawberries.
Smooth the mixture into an even layer in the dish. Arrange additional sliced bananas and strawberries on top, if using, gently pressing them into the surface.
Bake uncovered for 35 to 40 minutes, or until the oats are set, the top is lightly golden, and the center is tender but not wet. Remove from the oven and allow to cool slightly before serving, as the texture will continue to set as it rests. Drizzle a bit of pure maple syrup over the top just before serving.
Serves 4
Recipe Notes:
- Gluten-free rolled oats create a heartier, more structured baked-oat texture. Quick-cook gluten-free oats may also be used, though they will absorb liquid more rapidly and result in a softer, more pudding-like consistency. If using quick-cook oats, allow the baked oats to rest briefly after baking to help the texture fully set.
- Fresh strawberries will release more moisture during baking than frozen. If using frozen strawberries, thaw and drain excess liquid first for best results.
- Pure vanilla bean powder provides the best taste; however, pure alcohol-free vanilla extract can also be used.
