AW’s Guacamole
This creamy and delicious guacamole offers a surprising spin on the flavors of traditional guacamole with fresh sage and rosemary in addition to cilantro. These pathogen-fighting herbs elevate both the flavor and healing properties of this dip. AW’s Guacamole
Ingredients:
- 2 ripe avocados
- 2 tbsps finely chopped cilantro
- 1 tbsp finely chopped fresh sage
- 1 tsp finely chopped fresh rosemary
- 1 small garlic clove, finely grated or crushed
- 1 ½ tbsps freshly squeezed lime juice
- ½ - 1 tsp freshly squeezed lemon juice
- ¼ tsp sea salt (optional), or to taste
- ⅛ tsp freshly ground black pepper (optional), or to taste
- ¼ - ½ tsp red pepper flakes, or to taste
- 3-4 scallions, finely chopped, for topping
Directions:
Cut the avocados in half, remove the pits, and scoop the flesh into a medium bowl. Mash by hand with a fork until mostly smooth yet still slightly chunky. Do not use a blender or food processor.
Add the finely chopped cilantro, sage, rosemary, garlic, freshly squeezed lime juice, and freshly squeezed lemon juice to the mashed avocado. Stir until well combined.
Season with sea salt (if using), black pepper (if using), and red pepper flakes to taste. Mix gently until evenly distributed. Transfer the guacamole to a serving bowl and top with the finely chopped scallions. Serve immediately.
Serves 2-4
Recipe Notes:
- For a radical/overt fat-free, cleanse-friendly version, substitute 1 ½ cups steamed and cooled green peas for the avocados. Mash the peas by hand until mostly smooth. Reduce the herbs by half (1 tablespoon cilantro, 1 ½ teaspoons sage, ½ teaspoon rosemary) and reduce the lime juice to 2 teaspoons, to not overpower the flavor of the peas. Also skip the sea salt and pepper for a cleanse-friendly pea guacamole.
- Choose ripe avocados that yield just slightly to gentle pressure yet aren’t overly soft. This ensures they’re creamy and yet still have structure, and they’re less likely to be bad.
- It’s a myth that the skin of an avocado has to turn dark in order for it to be ripe. Some varieties of avocado soften and still keep a somewhat green skin.
- The best type of avocado for this is a creamy type, like Hass.
- Mashing by hand creates the ideal chunky-creamy texture.
- This guacamole is best served immediately after making, as avocado oxidizes and turns brown when exposed to air. If you need to store it, transfer to an airtight container and refrigerate for up to 24 hours at most.
- Adjust the red pepper flakes to your heat preference. Start with less and add more if desired.
