This dish can be made with either raw or cooked cauliflower rice. While it may seem intimidating to think of making your own sushi rolls, it’s surprisingly easy. They don’t have to look perfect in order to taste great! The options for filling your sushi rolls are endless. Try incorporating fresh herbs like mint, basil, and cilantro for a fresh twist, or branch out into other liver-healing vegetables like radishes, asparagus, or sprouts. You can even incorporate cooked vegetables like sweet potatoes or any variety of squash.
Cauliflower: A nutrient rich vegetable that is excellent for supporting a strong immune system and optimum health. Cauliflower is incredibly high in vitamin C, K, and B-complex and minerals such as boron, calcium, molybdenum, and tryptophan. It is also a good source of high quality protein that is easily assimilated into the body. Cauliflower contains powerful anti-cancer compounds such as indole-3-carbinol and sulforaphane which are particularly beneficial for helping to prevent breast, cervical, ovarian, colon, stomach, and prostate cancers.
Cucumbers: Allies to the liver due to their ability to hydrate it. Your liver’s always in need of living water that’s filled with minerals and other nutrients, because your liver keeps your blood hydrated. It relies on sources such as cucumber for that living water. This minimizes dirty blood syndrome by helping reduce fats and toxins inside of dirty blood. Phytochemical compounds in cucumbers act as anti-inflammatories to the small intestines and colon. Cucumbers have a gentle blood-thinning ability, too, allowing for detox to occur naturally, without obstruction.
6 toasted nori sheets
1 cucumber, thinly sliced
1 carrot, thinly sliced
1 red bell pepper, thinly sliced
1 cup thinly sliced red cabbage
1 avocado, thinly sliced
½ cup water
THAI CHILI SAUCE
1 cup cherry or grape tomatoes
1 cup cold water or fresh squeezed orange juice
¼ cup sun-dried tomatoes
1 garlic clove
2 tablespoons lemon juice
2 tablespoons honey
¼ teaspoon red pepper flakes
1 tablespoon minced Thai red chili or ripe jalapeño
Cut the cauliflower into florets (it should yield approximately 6 cups of florets). Place the florets into a food processor and pulse until a rice-like texture forms. Place the cauliflower rice in a medium bowl and set to one side.
If you’d prefer to have cooked cauliflower rice, cook the processed cauliflower in a sauté pan over medium heat, stirring frequently for 5 to 7 minutes until tender. There is no need to add oil or water to the pan, as the cauliflower itself should remain moist enough to avoid sticking. When the cauliflower rice is tender, set it aside in a medium bowl to cool.
Place one sheet of nori on a cutting board. Scoop about ¾ cup of cauliflower rice onto the end of the nori sheet closest to you and spread it into an even layer covering the bottom half of the nori. Arrange the desired filling vegetables in the middle of the cauliflower rice.
Carefully lift the nori from the bottom edge close to you and begin rolling it tightly toward the top. Just before finishing the roll, dip your finger in the water or orange juice and run it along the top edge of the sheet. This will help the nori stick to itself as you complete your roll. Using a sharp knife, slice each sushi roll into even pieces.
To make the Thai Chili Sauce, blend the fresh tomatoes, water, sun-dried tomatoes, garlic, lemon juice, honey, and red pepper flakes together with up to 1 tablespoon of minced Thai red chili or jalapeño according to desired spiciness.

This dairy-free, fat-free soup is like a hug inside a bowl. It’s creamy, warm, and comforting. The nourishing rich flavor of kabocha squash blends beautifully with the warmth of garlic, onions, and curry. This is a great one to make ahead and freeze so that you have an instant satisfying option on hand whenever you need it.
Winter squash (including kabocha, acorn, delicata, and butternut): Loaded with nutrients that our livers can easily store. High in carotenoids that protect liver cells from damage. The glucose in winter squash can stabilize the liver, allowing blood sugar to stabilize overall in the body.
Garlic: Since the liver deals with an onslaught of pathogens, it needs herbs and foods that help it fight its cause. Garlic is one such herbal food. The medicinal, pungent, astringent quality of garlic is a pathogen’s worst nightmare. Phytochemical compounds from garlic seep through the walls of the intestinal tract into blood vessels that lead up through the hepatic portal vein into the liver. The liver’s immune system welcomes these compounds because it knows they’re like a relief army coming in so the immune system can find reprieve and retreat to build up its forces. These phytochemical compounds are like throwing sand in someone’s eyes; they literally hit a variety of pathogens inside the liver, forcing them to back down and even killing off some of them. If you’re sensitive to garlic, try onions; they have similar qualities. If you’re not sensitive to garlic, don’t be afraid to bring it in when you feel like it.
Kabocha Squash Soup
1 medium kabocha squash (see Tips)
3 cups vegetable broth (see Tips)
1 cup diced onion
4 garlic cloves, minced
1 teaspoon curry powder
½ teaspoon sea salt
½ lime, juiced
¼ teaspoon red pepper flakes (optional)
¼ teaspoon sea salt
½ cup water
Bring a large pot of water to a rapid boil and submerge the whole kabocha squash, stem and all. Boil the squash for 10 minutes, flipping it upside down halfway through. Remove the squash carefully and set aside to cool.
When the squash is cool enough to handle comfortably, peel it, slice it in half, and remove the seeds. Cut the squash into cubes; this should yield about 4 cups. Place the cubed kabocha squash into a pot along with the vegetable broth, diced onion, garlic cloves, curry powder, sea salt, and lime juice. Bring the broth to a boil and then reduce to a rapid simmer, stirring frequently. Continue to simmer for 15 to 20 minutes, until the squash is tender and cooked through.
Transfer the entire contents to a blender and blend until smooth, slowly at first, allowing an opening for steam to escape through the top of the blender. Serve warm, topped with red pepper flakes if desired.
*Make your own broth using the Liver Rescue Broth recipe on page 368 of Liver Rescue. Alternatively, you can find low-sodium vegetable broth at the grocery store (make sure it doesn’t have canola oil, citric acid, natural flavors, or other sneaky additives) or replace the broth with water in a pinch.
*If kabocha squash is unavailable where you live, try substituting butternut squash, acorn squash, or even sweet potato instead. You’ll need about 6 cups cubed squash of any variety.

There are so many ways to make pancakes taste delicious, but these Apple Pie Pancakes might just become your favorite yet. Spiced apples piled high on a stack of perfect pancakes, all topped off with a drizzle of pure maple syrup—it doesn’t get much better! These pancakes are a perfect holiday themed treat or a great weekend breakfast or lunch for the whole family. They are free of eggs, dairy, and gluten and are low in fat, making them an indulgence you can feel good about.
Apples have wonderful anti-inflammatory properties and provide significant results for those suffering with autoimmune disorders such as Addison’s disease, Cardiomyopathy, Celiac disease, Lupus, and Multiple Sclerosis. Apples contain pectin, which is a gel-like fiber that can prevent the putrefaction of protein in the digestive tract. Pectin works like an intestinal broom to clean and sweep out debris from the colon. This is particularly beneficial for those who suffer from constipation or impactions.
Apple pectin has also been shown to bind with radioactive residues and toxic heavy metals such as lead and mercury and safely remove them from the body. One more benefit of apple pectin is that it has the ability to limit the amount of fat our adipose cells can absorb by building a barrier that naturally controls the buildup of fat in the body which makes it a great choice for any weight loss program.
Apple Pie Pancakes
1/2 cup + 1-2 tbsp unsweetened almond milk
1/3 cup unsweetened applesauce
1 cup wholegrain gluten-free oat flour
2 tbsp coconut sugar
1/2 tsp ground cinnamon
1/4 tsp ground cardamom
1/8 tsp of ground nutmeg
1 tsp baking powder
2-3 tbsp maple syrup, for drizzling
For the Spiced Apples:
2 red apples, diced
1 tbsp lemon juice
1/2 tsp cinnamon
1/4 tsp ground cardamom
2 tbsp coconut sugar
2 tsp water
In a small bowl or jug, combine the almond milk and applesauce. Mix well and set aside.
Add the oat flour, coconut sugar, ground cinnamon, ground cardamom, ground nutmeg and baking powder to a medium-sized bowl and whisk to combine. Pour theapple sauce mixture into the flour and stir until you get an even batter. Add 1-2 tbsp more almond milk if needed - the batter should be thick but pourable. Set aside.
To make the spiced apples, combine the diced apples, lemon juice, ground cinnamon, ground cardamom, coconut sugar and water in a small saucepan and bring to a simmer. Cook, uncovered, for 5-10 minutes, until the apples are cooked through.
While the apples are cooking, place a non-stick crepe or regular pan on medium-high heat and add a couple spoonfuls of pancake batter. Cook for 2-3 minutes on each side, until browned underneath, then flip. Repeat with rest of the batter.
Serve the pancakes immediately with spiced apples and a drizzle of maple syrup.

Candy Cane Kisses
Liquid from 1 can of organic chickpeas (aquafaba)
3/4 cup vegan caster sugar or blonde coconut sugar, ground finely
1-2 tsp freshly-squeezed organic beetroot juice (optional)
Line a baking tray with a clean sheet of parchment paper and preheat oven to 210F.
Place the liquid from a chickpea can into a large, clean bowl and whisk with a stand-mixer or electric beater until soft peaks form. Add the sugar little by little, beating thoroughly after each addition. Continue until all the sugar is added and the mixture has reached stiff peaks (stands upright on the whisk).
Place the meringue into a piping bag or clean ziploc bag with the corner cut off. Add a couple teaspoons of beetroot juice to the sides (if using). Pipe the meringue onto the parchment-lined baking sheet and bake in the oven for 2 hours, until firm to the touch. When done, turn the oven off, open the oven door slightly and let the meringues cool completely in the oven. Best kept in an airtight container.
Makes about 50-60 servings

Millions of Americans are struggling with weight gain and yet what’s really behind this pervasive issue is still unknown in conventional medical and alternative health communities. Almost exclusively, you’ll hear weight gain blamed on slow metabolism, overeating, too many carbohydrates, or a lack of exercise. These are common theories but they’re just that: theories. They aren’t the real reason there’s an epidemic of mystery weight gain across the globe.
Despite the theories and promises of trendy fad diets everywhere you look, it’s the liver that holds the answers to your questions about mystery weight gain. It is not as straightforward as burning more calories than we consume. Many times, people are following a trendy diet and exercising regularly and are still gaining weight. It’s critical to have great compassion for those who are struggling with their weight and to understand what’s really going on so we can help end the shame and judgement many overweight people experience.
The True Cause of Mystery Weight Gain
If you’re gaining weight, it means your liver is sluggish. I have a whole chapter on mystery weight gain and another chapter on sluggish liver in Liver Rescue: Answers to Eczema, Psoriasis, Diabetes, Strep, Acne, Gout, Bloating, Gallstones, Adrenal Stress, Fatigue, Fatty Liver, Weight Issues, SIBO & Autoimmune Disease. While two other factors, the thyroid and the adrenals, can often be involved, weight gain is really about what your liver is up against.
When someone can eat all the junk food she or he wants and not gain an ounce, it’s because they have a liver that hasn’t yet hit its fat-storing or poison-storing limitation and therefore functions at a faster pace. That doesn’t mean their liver isn’t overburdened or overstressed. You could be thin and still have a liver illness developing or a liver complication that’s causing or will eventually cause symptoms.
What could be overburdening the liver you might ask? Liver Troublemakers. That’s the name I have given to the hundreds of different toxins, pathogens and pollutants we have in our livers. We have all been exposed to many of them over our lifetimes and even before we were born we inherited them in the womb because they’re passed down from generation to generation in our family lines. Even the healthiest babies are born with livers that aren’t functioning at 100% because of these Liver Troublemakers (unfortunately it’s more like 70% at most.) To discover what these troublemakers are, where they sit in the liver, how they damage the liver, how long it takes for them to leave, and how to support your body and liver to remove them, you can read Liver Rescue.
Ideally, the liver would be strong and uncompromised enough to process fats, toxins, and hormones with ease, neutralizing and getting rid of the toxins altogether while only holding on to high-quality fats and hormones that could be useful to your body later. The reality is that for most people, the liver simply has too much to do and the liver can’t process fat as well as it’s meant to, so fat cells begin to collect in it at a more rapid rate. The liver becomes so congested internally that fat builds around the outside of it, with pre-fatty and then fatty liver developing. Fat cells then begin to accumulate in the intestinal tract, and eventually, the heart and arteries get saturated. Weight starts to cling on around the waist.
This is just one side of mystery weight gain. There’s a great deal more to understand that I cover in Liver Rescue so you have a complete picture of what is happening when you’re gaining unwanted weight.
The Adrenal Connection
One of the reasons that the liver begins to breakdown is an influx of adrenaline in the bloodstream. As life get busier and more stressful, adrenaline is pumped through the body in increasing quantities. No longer is this an issue solely restricted to mid or late adulthood with the many responsibilities and stresses this time of life holds. Students are becoming burnt out earlier on in their college careers and are taking a year off or dropping out of school completely. Even medical students are choosing to forgo residencies due to increasingly high levels of stress.
The reason that stress and adrenaline are so toxic is that they cause the liver to become overburdened. Add to that the high-protein and high-fat diets that are highly popular and normal today and the liver is put into further distress. Whether you’re plant based or love animal foods, high-protein diets (which are also inherently high in fat), are problematic for the liver. No matter what the fat source is—animal protein, soy, nuts, avocados, oil—too much of it burdens the liver. The ketogenic diet is especially problematic. Why? When you eat a high-protein and high-fat diet, your adrenals flood adrenaline into your bloodstream to help your liver disperse fats. Your liver needs this help because bile, whose job it is to breakdown fats, is weakened when your liver is under stress. If your adrenals do not respond with aid, excess fat in the bloodstream can lead to stroke or heart attack. This extra adrenaline, while corrosive and damaging, is your body’s way of protecting your life.
Healing the Liver
In Liver Rescue, I dive into the many troubles plaguing the liver and the solutions available to recover its health and help the Liver Troublemakers leave. The key is consistency; supporting your liver with plenty of fruits, leafy greens, and vegetables—16 ounces of straight celery juice on an empty stomach and my Heavy Metal Detox Smoothie are two options that can help you jumpstart the process. For those who have already been applying the information I share in Liver Rescue and my other books, rescuing the liver takes time so do not be discouraged. This means that weight gain can continue for a period when you’re doing the right things because the liver was already under such distress that it needs time to adjust and heal before the weight can start to leave.
Additionally, when we have viruses, bacteria, toxic heavy metals like copper, aluminum, or mercury, and other Liver Troublemakers sitting in our livers, recovery time increases. This is due to the fact that, when our livers are inundated with fats and our bile is weakened, viruses and bacteria take advantage of this dip in our immune systems and strengthen (you can read Liver Rescue or any of my books to understand why you might have these pathogens in your liver). If you suffered from acne as a teenager, for instance, and continue to see occasional outbreaks when you are sick or around your cycle, this is because acne is caused by the strep bacteria, which continues to sit in the liver long term producing more symptoms later in life. The same is true for cold sores and HHV. Other viruses, like Epstein-Barr (which has over 60 undiscovered strains), are also rampant, biding time, and straining the liver. All of these factors plus more I discuss in Liver Rescue play a part in the condition of your liver and the symptoms and illnesses you have now or could have in the future.
Our job, then, is to take care of our livers in the way they need on a daily basis. Then you will be healing every day, even when you can’t yet see or feel it. This includes limiting fat intake, whether it’s from plant or animal sources, to give your liver a break so it can work on other important roles aside from processing fats. It also includes eating the healthy critical clean carbohydrates I discuss in detail in Liver Rescue that our livers need to replenish vital glycogen storage and heal and prevent countless conditions. It’s so important to understand how your body works and what it needs from you so you can protect yourself and your loved ones now and in the future. Watching your children suffer from various illnesses and symptoms is heartbreaking. What’s even more difficult is not getting the answers you need to help your child heal. There are many health conditions that infants and small children suffer with that remain a mystery to medical science and research, including acid reflux and conditions like jaundice and Pediatric Autoimmune Neuropsychiatric Disorders (PANDAS). For moms and dads, this is an incredibly frustrating and disheartening process.
In many cases, young children’s and babies’ health symptoms and conditions are blamed on genetics or labelled autoimmune diseases. As I explain in Liver Rescue: Answers to Eczema, Psoriasis, Diabetes, Strep, Acne, Gout, Bloating, Gallstones, Adrenal Stress, Fatigue, Fatty Liver, Weight Issues, SIBO & Autoimmune Disease, neither of these are true and both prevent true healing for children. It’s critical if you’re a parent, grandparent, or intend to become a parent in the future that you understand what is really behind common illnesses babies and children suffer with. Because without the truth, the unknown underlying causes for their symptoms will create more health problems for your children later in life. The information I share in Liver Rescue is there for you so you know what’s really going on in your child’s body and how you can help them heal.
One common misconception is that babies are born with a clean slate when it comes to their body and health. That they are born with organs like the liver fully functioning and in good working order. Unfortunately, this isn’t the case at this point on our earth. No one is born with a liver that’s operating at 100% because toxins and pathogens are passed down from generations long before us, and these toxins affect infants in utero. This is one of the reasons a baby can experience symptoms upon birth, soon after birth or in the first few years of their life. Plus, early standard medical treatments for babies can fill newborns’ livers with what I call “Liver Troublemakers”. I list hundreds of these Liver Troublemakers in Liver Rescue so you can get a full picture of why even our children’s livers are under duress today.
What this means is that the average healthy person today is born with a liver that is functioning at about 70% capacity—best-case scenario. For infants under intense stress during pregnancy, for various reasons, this percentage is lower. As we grow into adulthood, this number continues to decrease. This reduced liver function can cause bloating, acid reflux, jaundice, PANDAS, and many other conditions that pediatricians prescribe medication for without knowing or addressing the underlying problem because they aren’t aware of what’s really causing it.
There are many theories circulating in the medical community as to why babies develop acid reflux or bloating. One belief is that it’s because of the mother’s breast milk, which isn’t true. Another common theory is that a baby’s intestinal tract has not developed properly or coiled correctly, causing stress on the intestines. Another is that the intestinal tract is so soft and so pliable that sitting at a certain angle puts pressure on the duodenum. Doctors say that this intestinal stress will eventually subside, and symptoms of GERD (gastroesophageal reflux disease) do go away. But just because these symptoms clear does not mean that the root cause, a weak liver, has disappeared. Instead, the real cause, which I call Baby Liver, goes silent for a short while, until other conditions appear down the road. I explain this in-depth in Liver Rescue.
Moms and dads, what your pediatricians should be telling you is that your baby’s overburdened liver and gallbladder are behind acid reflux. The reason for this is that when an infant’s liver is weakened from ancestral toxins and pathogens (the Liver Troublemakers), it has to create more bile and hydrochloric acid than it’s meant to and designed to at this early stage of life. A baby’s liver is not meant to produce large levels of bile, nor is a baby’s stomach meant to produce high amounts of hydrochloric acid. Breast milk is made up mostly of sugar and water, not protein and fat. This high sugar and low protein and low fat composition requires very little bile production. (An unknown truth is that the brain is made out of glycogen and carbohydrates, not fats, which is why this sugar-water is so essential to a baby’s health!)
That said, what little bile and hydrochloric acid a baby does need to produce is still important. When a baby’s liver is weak from the start, it can create a digestive issue, because baby liver translates to bile underproduction and low hydrochloric acid. When a baby’s liver is sluggish or stagnant right from the start, bile and hydrochloric acid will diminish even more. What little fat and protein there are in breast milk, the baby will have a harder time digesting on a micro scale, resulting in those GERD-like symptoms that are a mystery to doctors.
When a child exhibits symptoms like yellow skin or yellow eyes, doctors immediately know that they are dealing with a problem in the liver. This is the one condition that medical science and research know is a liver problem. What they are not able to do, though, is connect the dots. Doctors assume that the baby’s liver cannot handle the work of creating and breaking down blood cells. In reality, the liver is trying to overcome a highly toxic load made up of those Liver Troublemakers I share in detail in Liver Rescue. In other words, the liver is sluggish, stagnant, toxic, compromised and overburdened. This is especially problematic given the over 2,000 chemical functions of the liver, over 75% of which are undiscovered by medical science and research. The toxicity and burden on the liver can set the stage for future symptoms and illnesses later in life if someone doesn’t know the truth about how to properly care for the liver and get the Liver troublemakers out safely.
In the case of PANDAS, doctors turn their attention to the bacteria streptococcus. While strep is often present in a child’s system, weakening the immune system, the real troublemakers behind PANDAS are the virus HHV-6 in combination with the toxic heavy metal mercury being present in the child’s system. Medical science and research are still unaware of the truth that viruses feed on toxic heavy metals (and other Liver Troublemakers) in the body. So in the case of PANDAS, HHV-6 is feeding on the mercury, which produces neurotoxins and internal dermatoxins that cause the symptoms associated with PANDAS such as OCD, spasms, acute attacks, and rashes. To fully understand PANDAS and how it develops, you can refer to the chapter I wrote about it in Liver Rescue.
While it can be frustrating to visit the doctor’s office and receive no real answers, it is worth bringing these issues to your pediatrician’s attention. In Liver Rescue, I discuss these conditions further, as well as the types of foods and supplements beneficial for babies and children. With these tools, you can help your children heal their livers as they grow up. You can also take the information in the book to your doctor or healthcare practitioner if you wish and find someone who will work with the information to help you and your family. I know being a parent is already such a brave and difficult job, and when your baby is sick, it becomes so much harder. Apples provide living water to support the liver’s hydration capabilities, so it can store the water and then release it back into the bloodstream when dehydration or dirty blood syndrome occurs. The fruit acids in apples help cleanse the liver by dispersing toxic films that build up inside its storage banks. Apples starve out bacteria, yeast, mold, other funguses, and viruses from the intestinal tract and liver. Great for dissolving gallstones.
Dates help expel and eliminate mucus from the intestinal tract. The sugars in dates also fuel the liver; they’re a great source of glucose for recovery and restoration that allows the liver to maximize its over 2,000 chemical functions.
Caramel Apple Rings
1 lemon, juiced, divided
3 red apples
1 cup Medjool dates, pitted
1 inch vanilla bean (optional)
½ cup water
1 cup raspberries
¼ cup raisins
¼ cup dried mulberries
¼ cup shredded coconut
2 tablespoons raw honey
Fill a large bowl with cold water and pour half of the lemon juice into it. Turn each apple sideways and carefully cut it into slices about ¼ inch thick. Use a small cookie cutter or bottle cap to punch the core out of the center of each apple slice. Place the finished rings immediately into the bowl of lemon water to prevent browning.
Blend the dates, vanilla bean, ½ cup water, and remaining lemon juice together until a thick, smooth “caramel” forms.
Remove the apple rings from the water. Spread caramel along the top of each ring and add any desired toppings!
If the dates you’re using are dry, try soaking them in warm water for a few minutes prior to blending.

Even alternative health communities tend to blame brain fog on the wrong cause. They often believe it’s caused by yeast or fungus in the gut, but this isn’t true. A friend of mine told me about the electrician at his office who is suffering from terrible intestinal issues, but has no brain fog. On the other hand, there are people who eat incredibly clean diets and don’t have noticeable digestive issues, and yet they do suffer from terrible brain fog. I’ve known countless people and heard many stories of people who have experienced the very same thing over the years. The gut is not what causes brain fog. It’s also not caused by the thyroid, which is another common belief in medical communities. Nor is it a condition to be taken lightly.
Sadly, this condition can be so extreme that it causes people to lose their jobs, drop out of school, or spend days in bed when they need to be looking after their family or other responsibilities. Brain fog is not just the result of anxiety or a late night out. Fatigue, anxiety, and depression can accompany brain fog, but they are not the cause. It is so much more than that and it is time to uncover what is really going on. To properly understand the causes of brain fog and how you can your loved ones can heal from it, it’s important to read Liver Rescue.
The root causes of brain fog can be traced to both the liver and the brain. There are many different “Liver Troublemakers” that sit in our livers. This is the name I have given to hundreds of toxins, chemicals, pollutants, pathogens, foods and more that I list in Liver Rescue, including where they come from, why they are problematic, and how to cleanse them from your body. Some of these troublemakers include viruses like Epstein-Barr, excess adrenaline from being in the almost constant fight or flight mode most of us experience every day with our busy lifestyles, and toxic heavy metals such as copper, mercury, aluminum, and more.
When viruses like Epstein-Barr are present in the liver they need to sustain themselves to survive. They do this by eating substances that they like. Medical science and research have yet to discover this truth that all viruses feed. They cannot exist on their own, and what they enjoy most are certain foods we eat and toxins we often have inside us, such as toxic heavy metals, pesticides, petrochemicals, and fungicides, to name just a few. And, just like us, when a virus feeds, it also has to eliminate. When viruses eat toxins and problematic foods, they will then excrete even more toxins into your body. I call these toxins excreted by viruses dermatoxins and neurotoxins.Again, medical science and research also aren’t aware of either of these yet. If you’ve heard of the word dermatoxin before, the world understand it as an external chemical or irritant to the skin. But these dermatoxins that com from viruses are internal dermatoxins. The neurotoxins leave the liver after viruses excrete them and travel the hepatic portal vein to the heart and up to the brain. Their next stop is neurons in the brain, where they can cloud up, interfere with, and short-circuit neurotransmitters. In order for our brain to function properly, and for thinking to happen naturally, we need clean neurotransmitter chemicals that can pick up neuroelectrical impulses sent out through the brain. But when the neurotoxins that came from viruses in the liver reach the brain, they can sit on neurons and burn out neurotransmitter chemicals, making the neurotransmitters dirty. And when an electrical impulse travels to a dirty neurotransmitter, it dampens it and shorts it out. Neurotransmitter chemicals dirtied by neurotoxins are a recipe for brain fog. This will take at least 50 years to uncover by medical science and research. These shorted-out neurotransmitter chemicals can also trigger anxiety, depression, and other symptoms and conditions.
Additionally, there’s another cause of brain fog. When toxic heavy metals like mercury and aluminum are already present in the brain, which is the case for almost everyone to some degree, they can oxidize and create a metallic run-off that saturates your brain tissue. Again, your electrical impulses are short circuited by dirty neurotransmitters. The important thing, though, is not to worry about which type of brain fog you might be suffering from, because the truth is, most people are suffering from both types. The best thing you can do is focus on the healing foods and supplements for brain fog that I share in Liver Rescue and excluding the foods and toxins I discuss that contribute to this issue.

Detoxing Your Liver
Now that you have some of the answers for what’s really behind brain fog, you can move forward with healing. By eating a diet that consists of a abundance of fresh fruits, leafy greens and vegetables, along with avoiding the foods I discuss in Liver Rescue, you can not begin detoxifying your liver , but also offer your adrenals and brain the support they need.
There are problematic foods—like eggs and dairy products—that feed viruses and other pathogens in the liver. That includes even grass-fed milk, cheese, and butter. Gluten is another offender. Gluten is a favored food of the Epstein-Barr virus and other viruses and bacteria. And remember that the more a virus eats, the more toxins it will eliminate, which will only worsen brain fog and other symptoms.
Leafy greens, fruits, and vegetables, on the other hand, will support the liver in ridding viruses and toxic heavy metals from the body. The classic combination of broccoli and cheese is a winner all on its own. Place it inside a crispy pocket made from potato and you’ve got a mouth watering new way of enjoying this common favorite. What makes this recipe really unique is that its made of truly healthy and healing ingredients. There’s no cheese, milk, gluten, or butter. It’s even fat free, which makes it an ideal snack or meal for anyone trying to support their liver, which is an integral part of healing from chronic illnesses and symptoms.
Potatoes are an important food for those who are heavy thinkers and those recovering from stress damage and adrenal exhaustion. They are also particularly beneficial for depression, insomnia, sleep disorders, brain fog, and stress related illnesses. Potatoes are also known to be good for promoting cardiovascular health and are highly beneficial for reducing the risk of heart attack, stroke, atherosclerosis, and COPD.
Broccoli is highly beneficial for the nervous system and is known to ease migraines, hypertension, anxiety, and nervous ticks. It contains natural antihistamine properties and is fantastic for warding off seasonal allergies, watery eyes, sinusitis, sinus infections, colds, flu, and bronchitis. Broccoli is well known for its ability to protect against heart disease and reduce the risk of atherosclerosis, strokes, and heart attacks.
Broccoli & Cheese Potato Pockets
4-5 medium potatoes
1 tbsp potato starch
3 tbsp tapioca flour (more if needed)
1 tsp dried oregano (optional)
1 tsp water (if needed)
1 large potato, diced
1 carrot, diced
1 tsp turmeric
1/2 tsp garlic powder
1/2 tsp cayenne
1 tbsp lemon juice
1 tsp sea salt
1/2 tsp black pepper
1/2 cup steaming water or vegetable stock
1 ¼ cup broccoli, finely chopped
1 tsp lemon juice
Sea salt, to taste
In a large pot fitted with a steaming basket, add the potatoes and carrots. Add a few inches of water and steam until soft, about 45 minutes to 1 hour. Remove and cool for 10-15 minutes, until cool enough to handle. Remove one potato and one carrot from the pot and set aside for the cheese sauce.
Place the remaining potatoes in a large, flat-bottomed bowl or pot and mash until they are broken down. Add the potato starch, tapioca flour and oregano and mash until the flour and starch are well combined. If the mixture is very dry, add a bit of warm water. If the mixture is very wet, add a bit more tapioca flour. The dough should be pliable and not stick to your fingers. Set aside while you make the filling.
Place the left-over potato and carrot in a small food processor or blender and add the turmeric, garlic powder, cayenne, lemon juice, sea salt, black pepper and water/vegetable stock. Blend until smooth. Add a bit more liquid if necessary, then set aside.
Steam the chopped broccoli until cooked. Remove and add to bowl. Add the lemon juice and season with sea salt.
To make the pockets, take a handful of the potato mixture and roll it into a ball. Flatten the sides out so that there is a cavity in the middle, then add a couple teaspoons of the cheese sauce and broccoli. Close the pocket gently and smooth out any creases. Repeat with remaining dough.
Add the pockets on a ceramic nonstick pan and cook for 5-10 minutes on either side, until browned and crispy. You can bake them in the oven at 350F for an additional 20 minutes if you want them even more crispy.

This colorful pasta dish is loaded with tender roasted vegetables and tossed together in a light tomato sauce that leaves everything moist and flavorful. It’s a great dish to serve when gathered around the table with friends and family, even those who may not eat the same way. If you’re serving others, feel free to add a small dash of olive oil to their individual dishes just prior to serving, and they’ll never miss a thing!
Tomatoes harness critical micronutrients, phytochemicals, vitamins, and minerals to support many functions of the liver. Lycopene is a beloved nutrient that the liver admires: the liver uses it to shield itself from cell damage, plus lycopene helps the liver detox red blood cells safely, smoothly, and efficiently. The fruit acids in tomatoes help keep the gallbladder healthy, helping rid sludge from the gallbladder and even reduce gallstone size. If you’re avoiding tomatoes due to trendy nightshade hatred that constantly recirculates over and over again, you’re missing out on keeping your liver healthy and preventing disease.
Onions have antimicrobial sulfur compounds that expel unfriendly pathogens from the liver. Onions have a disinfecting quality for the liver, keeping it from becoming inflamed. They also improve the temperature control or “thermostat” of the liver so it can heat and cool itself properly.
Garlic is one of the world’s oldest medicines and is an incredibly potent spice that can ward off a variety of illnesses and diseases. It has amazingly high levels of vitamins and minerals including vitamin C and B-6 and minerals such as selenium, calcium, and iron. Garlic also contains very strong antibiotic, anti-fungal, anti-cancer, and anti-viral properties.
Roasted Veggie Pasta
3 cups cherry or grape tomatoes
1 cup sliced red onion
1 cup diced zucchini
1 cup diced carrot
1 cup diced asparagus
10 garlic cloves, skin on
½ teaspoon lemon juice
¼ teaspoon sea salt
¼ teaspoon red pepper flakes (optional)
12 ounces gluten-free pasta (see Tips)
4 cups arugula (optional)
Additional sea salt, dulse, and/or black pepper to taste
Preheat the oven to 400°F. Spread out the tomatoes, red onion, zucchini, carrot, asparagus, and garlic on two baking trays lined with parchment paper and roast the vegetables for 15 to 20 minutes until tender.
Peel all the roasted garlic cloves (being careful not to burn your fingers) and place 4 of them in the blender along with 1 cup of the roasted tomatoes, the lemon juice, sea salt, and the optional red pepper flakes. Blend the ingredients until a light, smooth tomato sauce forms.
Prepare 12 ounces of gluten-free pasta according to the directions on the packaging. Drain the pasta and transfer to a mixing bowl. Toss the pasta in the tomato sauce. There should be just enough sauce to lightly coat the noodles.
Add the remaining roasted tomatoes, red onion, zucchini, asparagus, and garlic cloves. Toss gently to combine. Serve the pasta over a bed of arugula if desired, and add an optional extra sprinkle of sea salt, dulse, and/or black pepper to taste.
Makes 2 to 4 servings
Look for a gluten-free pasta made from rice, quinoa, beans, or lentils. Try to avoid the varieties that contain corn.
While this pasta is lightly tossed in a small amount of tomato sauce for flavor, if you want a hearty portion of tomato sauce on top of your pasta, try pairing this recipe with the tomato sauce recipe used in the Ratatouille recipe on page 400 of Liver Rescue.
