We tend to forget about vitamin C unless we’re trying to fight off a cold. Even though we’ve read in the history books about sailors who used to contract scurvy on long voyages without fresh fruit—so we’re familiar with the concept of vitamin C deficiency—it drifts off to the parts of our minds where we store information about DDT, mercury, and other dangers we think are set firmly in the past. Truth is, vitamin C deficiency is still a reality today, and it can contribute to almost any disease. Vitamin C is a critical part of how we survive here on earth—which is why you want rose hips in your life. The vitamin C in rose hips is the most bioidentical, bioavailable form of vitamin C in existence—that is, the most usable form for our bodies. Plus, the vitamin C in rose hips has the power to transform other vitamin C found in the system from other foods you eat into something bigger and better, which is why taking a vitamin C that’s enhanced with rose hips or drinking rose hip tea if you’re taking vitamin C helps to maximize its potency. Vitamin C is anti-inflammatory (and the vitamin C in rose hips is more anti-inflammatory than from any other source); helps increase our blood’s white count by strengthening our neutrophils, eosinophils, basophils, and macrophages; and generally boosts the immune system against viruses, bacteria, yeast, mold, and other unwanted fungus.

Rose hips are a particularly helpful catalyst for battling virtually any type of infection. When a virus such as Epstein-Barr is active in the body, it often gives off damaging neurotoxins and dermatoxins, and in the process, a jelly-like substance called biofilm forms from the virus’s debris. This biofilm is not only like a petri dish for unproductive microorganisms such as bacteria in the body, it can also gunk up the works of critical organs. The liver acts as a sponge, absorbing this biofilm in an effort to protect the body, however the biofilm can break loose into the blood, and then, because the heart draws much of its blood from the liver, this sticky jelly residue can get caught in heart valves such as the mitral valve. This is a hidden cause of mystery heart palpitations, tachycardia, atrial fibrillation, and arrhythmia. The vitamin C in rose hips can stop this from occurring. It has a dissolving effect on biofilm, helping to break up deposits of it and ultimately give relief to the person who suffers from irregular heartbeats.

2 teaspoons dried rose hips
1/2 cup orange juice

Boil 2 cups of water. Steep rosehips in 11/2 cups of water for 5 minutes or more.*Place the tea in the refrigerator to cool. When cool, add 1/2 cup of orange juice. Serve over ice and enjoy!

* If a stronger, more medicinal tea is desired, use 2 teaspoons or up to 1 tablespoon of the tea blend per serving.

Veggie Fries

The aromatic herbs oregano, rosemary, sage, and thyme possess complementary qualities. Each has a different specialization, and when you consume them all on a regular basis (whether in diet, supplementation, or a combination), their disease-fighting phytochemical compounds and extremely high levels of a broad spectrum of minerals provide a well- rounded, powerful defense against the pathogenic world. (Parsley is another aromatic herb covered in this book, and it gets its own feature, because it’s more of an individual.)

Aromatic herbs get much of their power from being very close to wild, even when cultivated. They need very little care to establish themselves and thrive; when they’re neglected, they’re still able to miraculously get what they need to pro- vide you with the high levels of nutrients you need. It is unknown to scientific communities that aromatic herbs release an antifungal compound from their roots that earthworms love. The roots of aromatics become a gathering place for earthworms, as the worms ingest this antifungal to keep themselves healthy. In return, the earthworms aerate the soil around the roots and leave behind a rich fertilizer that can’t be matched. This symbiosis is what gives aromatic herbs their unique healing properties. (If you grow these herbs in pots, or if you don’t have earthworms in your garden, make sure you use a mineral solution and enough organic fertilizer.)

Here’s a closer look at each of these stand-out aromatics:

Oregano: Amazing for killing off unproductive bacteria such as H. pylori, Streptococcus, and E. coli, which minimizes the possibility of SIBO, peptic ulcers, strep throat, ear infections, and sinusitis. Oregano oil is an incredible antibacterial, especially for killing off the E. coli that causes diverticulitis and diverticulosis. It’s also effective against ringworm.

Rosemary: Another antibacterial, rosemary specializes in fighting antibiotic-resistant bacteria, such as those that take hold in hospitals. Bringing this herb into your diet is a game changer if you’re dealing with the sorts of bacteria (such as C. difficile and multi-drug-resistant Staphylococcus aureus, or MRSA) that can result in conditions such as megacolon, severe infection, and can even lead to death.

HERB-BATTERED ROOT VEGETABLE FRIES 



These may be the best veggie fries you’ll ever eat. The trick is to boil the root vegetables and then shake them vigorously before baking. The herbs and garlic generously coat the outside and the smudged edges will turn crispy in the oven. If you’re pressed for time, you can omit the extra steps and send them straight to the oven, though those few extra minutes will yield truly amazing results. Make a big enough batch to share—these won’t last long!

3 pounds assorted root vegetables (such as potatoes, sweet potatoes, parsnips, carrots, and celery root)
2 tablespoons coconut oil
1 teaspoon sea salt
2 tablespoons finely minced garlic
1 tablespoon each finely minced sage, oregano, rosemary, and thyme

Preheat the oven to 400°F. Peel and slice the root vegetables into “fries.” Transfer the vegetable fries to a large pot, cover with water, and bring to a boil. Boil the fries for 5 to 7 minutes, until just cooked through but not soft. (Watch carefully so as not to overcook.)

Drain the water. Add the coconut oil, sea salt, garlic, and herbs to the fries and stir briefly. Cover the pot and shake vigorously until the fries are well mixed with their edges slightly mashed.

Line a baking tray with parchment paper. Arrange the fries on the tray so none are overlapping. Place in the oven and bake for 20 to 25 minutes, flipping once halfway through. Remove when the edges turn golden and crispy.

Makes 3 to 4 servings

PAPAYA SMOOTHIE BOWL

6 cups cubed papaya
4 dates, pitted
2 cups raspberries, divided
1 cup diced mango
1 banana, sliced
1 tablespoon shredded coconut
1 tablespoon minced fresh mint
1⁄2 lime

Blend the papaya, dates, and 1 cup of the raspberries in a blender until smooth. Pour the mixture into 2 bowls. Arrange the mango, banana slices, and remaining raspberries on top. Finish with a sprinkle of shredded coconut, fresh mint, and a squeeze of lime.

The sugar from the honey extracts healing phytochemicals from the tart, medicinal skin of the grapes, making these nutrients bioavailable and delivering them deep into your vital organs.

Toxic heavy metals are virtually everywhere, and are present in things we come in contact with every day, such as aluminum cans and aluminum foil, batteries, metal cookware, old paint, and even the foods we eat. For instance, pesticides and herbicides (which are hard to completely avoid even on a strict organic diet), are a common source of heavy metals. As a result, most of us are carrying around heavy metals that have been with us for almost our whole lives and which have burrowed deep inside our tissues.

Unfortunately, it is these “old” metals, the ones that have been lurking in our system for prolonged periods of time, that pose the greatest threat. For example, over time toxic heavy metals can oxidize, causing damage to surrounding tissue and promoting inflammation. They literally poison our bodies, and can inflict damage on virtually every system and organ, including our brain, liver, digestive system, and other parts of our nervous system. Toxic heavy metals put an immense burden on our immune system, leaving us vulnerable to a variety of illnesses.

While toxins of every kind are harmful, heavy metals pose a unique threat. Not only are they damaging in their own right, they are also a form of neurotoxin (a poison that disrupts nerve function and confuses your immune system). Heavy metal neurotoxins can inflame and irritate our central nervous system (especially our brain), causing multiple symptoms such as memory loss, brain fog, fatigue, and depression. Toxic heavy metals can also promote inflammation in the digestive tract, releasing poisons into our gut as well. As if this isn’t bad enough, heavy metals also serve as a source of food for viruses, bacteria, parasites, and other pathogens in our body.

For example, heavy metals can serve as a feeding ground for Streptococcus A or B, E. coli, C. difficile, H. pylori, and yeast cells. This can create an overgrowth of multiple bacteria in our gut, resulting in a condition known as SIBO (small intestinal bacterial overgrowth), which is characterized by bloating, abdominal pain, diarrhea, constipation (or both), and can lead to nutrient deficiencies. Additionally, when viruses such as Epstein-Barr and shingles feed off toxic heavy metals, this can produce symptoms such as tingling, numbness, fatigue, anxiety, heart palpitations, ringing in the ears, dizziness and vertigo, as well as neck pain, knee pain, foot pain, pain in the back of the head, and a variety of other aches and pains that are often attributed to other causes.

It's virtually impossible not to take in a certain amount of these toxic heavy metals in our modern era, so it's vitally important to our health that we get them out before they can wreak further havoc on our health. Thankfully, it's relatively simple to remove them from our organs if we consume the right foods to do so. Adding the following all-star team of foods to your diet and being diligent in your efforts to consume them will go a long way toward ridding your body of heavy metals:

Spirulina: This edible blue-green algae draws out heavy metals from your brain, central nervous system, and liver, and soaks up heavy metals extracted by barley grass juice extract powder. Take 2 teaspoons mixed in water, coconut water, or juice. 

Barley grass juice powder: prepares the mercury for complete absorption by the spirulina. This nutritive grass has the ability to draw heavy metals out of your spleen, intestinal tract, pancreas, thyroid, and reproductive system. Drink 1-2 teaspoons mixed into coconut water or juice.

Cilantro: Goes deep into hard-to-reach places, extracting metals from yesteryear (so it’s great for that mercury inheritance you’re carrying around!). Blend one cup in a smoothie or juice, or add to salad or guacamole.

Wild blueberries: Draw heavy metals out of your brain tissue, healing and repairing any gaps created by oxidation when the heavy metals are removed. It is important to use wild blueberries, as they possess unique phytonutrients with special detoxifying capabilities. The potent antioxidants in wild blueberries help reverse any oxidative damage left behind by the heavy metal removal. This is especially important for your brain tissue—in fact, wild blueberries are the most powerful food for halting or in some cases reversing Alzheimer’s and dementia. Eat at least one cup daily. Note: while cultivated blueberries are nutritious, they lack the metal-drawing ability of the wild blueberries. Wild blueberries can be found in the freezer section of most supermarkets.

Atlantic dulse: In addition to mercury, this edible seaweed binds to lead, aluminum, copper, cadmium, and nickel. Unlike other seaweeds, Atlantic dulse is a powerful force for removing mercury on its own. Atlantic dulse goes into deep, hidden places of the digestive tract and gut, seeking out mercury, binding to it, and never releasing it until it leaves the body. Eat two tablespoons of flakes daily, or an equal amount of strips if it’s in whole-leaf form. Note: As it comes from the ocean, if you are concerned about the dulse itself having mercury, be aware that Atlantic sea dulse will not release any mercury it might possess into the body. It holds on to the mercury as it works its way through, and even grabs onto other metals along the way and drives them out as well. Atlantic dulse is a critical part of the team because it can hang out near the finish line (i.e., our colon), waiting for the other foods that have been grabbing on to heavy metals along the way. It serves as emergency backup, helping ensure that all the heavy metals that made it as far as the colon actually leave the body.

Heavy Metal Detox Smoothie

Ingredients:
2 bananas
2 cups wild blueberries
1 cup cilantro
1 cup orange juice
1 tsp barley grass juice powder
1 tsp spirulina
1 small handful of Atlantic dulse
Optional: water to blend

Directions:
In a high speed blender, blend all ingredients until smooth. If a thinner consistency is desired, add up to 1 cup of water. Enjoy!
