These crispy baked zucchini fries are the perfect healthy and delicious way to conquer a fried food craving! Coated in chickpea breadcrumbs and spices, these fries have that crunch factor that will both satisfy you and keep you coming back for more!

Zucchini is a highly alkaline food that is one of the mildest and easiest vegetables to digest. Zucchini is a great source of vitamin A, C, & B-complex as well as minerals such as iron, zinc, potassium, and manganese. It is high in fiber and low in calories which makes it a great weight loss food and helps to reduce constipation and bloating.

Zucchini is a fruit that’s helpful for liver hydration. It allows the liver to store micro pockets of water that it can later release back into the bloodstream during moments of chronic dehydration in your life. Zucchini have a mild liver purging effect, allowing the liver to squeeze out poisonous troublemakers safely. It’s also soothing to the intestinal tract walls, pushing out pathogens such as bacteria and fungus, allowing for better absorption of nutrients that can be sent up to the liver. Zucchini is also a beneficial gallbladder food, containing phytochemicals that actually reduce gallbladder inflammation.

Zucchini Fries

Ingredients:
1 medium-sized zucchini, cut into fries
3/4 cup chickpea breadcrumbs
1 tsp dried oregano
1 tsp paprika
1/2 tsp garlic powder
1 tsp sea salt
2 1/2 tbsp ground golden flaxseeds
1/2 cup unsweetened almond milk

Ketchup
6 oz tomato paste
1/3 cup apple juice
2 tbsp lemon juice
2 tsp raw honey
1/4 tsp dried onion powder
1/4 tsp garlic powder
1/4 tsp dried oregano
pinch cayenne pepper or chili flakes (optional)
sea salt to taste (optional)

Directions:
Preheat oven to 400F. Line a large baking tray with parchment paper.

Combine the chickpea breadcrumbs, dried oregano, paprika, garlic powder and sea salt in a small bowl and mix until combined. Set aside.

In another bowl, make the flax egg by combing the ground flaxseeds and unsweetened almond milk. Whisk until uniform. Set aside for at least 5 minutes to thicken.

Dip the zucchini first into the flax egg and then into the breadcrumb mixture, coating it evenly. Place on the baking sheet and repeat with the rest of the zucchini pieces. Place in the oven and bake for 20-25 minutes, until golden and crispy. Serve immediately.

Pineapple & Ginger Smoothie

Ingredients:
2 cups chopped pineapple (fresh or frozen)
2 cups chopped mango (fresh or frozen)
1 inch piece peeled ginger
1 cup water or coconut water
6 ice cubes (only if you use fresh fruit)

Directions:
Place all ingredients except ice in a blender. If you are using frozen fruit, you may need 1.5 to 2 cups of water. Blend until smooth. If you used fresh fruit rather than frozen, add ice and blend again. Sip and enjoy!

The truth is oxalates are nothing to fear. Oxalates or oxalic acid, are natural substances found in all fruits, vegetables, leafy greens, herbs and animal products. If you were to avoid oxalates, you would barely be able to eat anything. Even if oxalates were worrisome, celery contains significantly less oxalates than most other common foods. 2. Psoralens

These are phytochemical compounds that exist in nearly every fruit, vegetable and herb. They are critical for the immune system and for the healing process. If you hear that psoralens create sun sensitivities or dermatitis, know that this is not true. On the contrary, celery juice is incredible for the skin. 3. Salicylic acid

There is a theory that some people are sensitive to salicylic acid in fruits and vegetables. This is another mistake that can prevent people from consuming celery juice and receiving its healing benefits. Medical research and science have not proven this theory and yet it has gained popularity as something to blame for various symptoms and conditions. Celery isn’t even a vegetable—it’s an herb, so it shouldn’t even be grouped in with a vegetable issue in the first place.

Celery is an herbal medicine that helps reverse chemical food sensitivities, which many people develop from gluten, dairy, corn, eggs and soy because these foods feed pathogens and pathogens create inflammation and health problems. 4. Sodium

Just as not all sugar is the same and not all water is the same, not all sodium is the same either. First, the undiscovered subgroup of sodium in celery juice that I call “sodium cluster salts” salts are deeply hydrating, unlike table salt or even high quality sea salt or crystal salt. Your body, blood, organs and brain crave the sodium cluster salts in celery juice.

It’s important to minimize how much salt you’re having from packaged foods and putting salt on top of your foods, but this salt is totally different to the sodium cluster salts in celery juice. Even the most premium jar of organic salsa or salted nut mix is full of salt that stores itself in cells deep inside our organs, where it crystalizes and essentially pickles and preserves our organs. The salt added to our food also embeds itself in the liver. It takes decades, but it does happen with time. We’re slowly salting ourselves to death in this culture. Suddenly people’s skin starts getting saggy or aging quickly. That’s partly due to a lifetime of salt crystallization that’s built up in the liver and other organs, (which are getting dehydrated to levels you’d never imagine). This buildup becomes toxic over time if we’re not clearing it out.

Anyone who is concerned about salt intake should be limiting packaged food and meals out, but certainly not staying away from celery juice. The truth is celery juice is exactly what someone who has been consuming too much sodium needs. Celery juice helps loosen up and break apart old toxic salt deposits that are crystalized in the liver and other parts of the body. The cluster salts in celery juice attach themselves to toxic sodium and carry those deposits out of the body. In doing so, celery juice frees people from possible toxic salt-based problems down the road.

In addition to clearing out salt deposits, celery juice’s unique properties and its mineral and trace mineral composition are exactly what our blood and cells needs most. 3. Use celery tablets and celery powder.

You will see celery powder, celery juice powder and celery tablets become increasingly popular as more industries try to capitalize on the celery juice movement. It’s important to know that these products can’t replace fresh celery juice. 5. Celery juice is a diuretic.

No, celery juice is not a diuretic. Celery juice has a very mild diuretic effect (that’s especially minor compared to the diuretic effects of green tea, black tea, coffee or alcohol). Anything that has a high mineral content will encourage your system to flush because trace minerals bind onto toxins, and then your body flushes it out. Celery juice has an extremely high mineral content but its mild diuretic effect is gentle, safe and necessary for eliminating poisons and detoxifying your body. Also, every single fruit, leafy green and vegetable on the planet also has a mild diuretic effect because they all contain minerals and are designed to help detoxify the body. So if you eat any plant at all (unless it’s fried, for example), you’re already experiencing and receiving these mild diuretic benefits.

6. Your elimination will be colorful.

I recently saw something about celery juice turning your stool red. Not true. If you have red stools, you need to check what you’re eating (beets for instance can make your stool red) or talk with your doctor. Celery juice won’t turn your stool red, or purple, or yellow. However, in some cases, if you drink a lot, it may turn your stool slightly green.

7. There’s no fiber so there’s no benefit.

Some people criticize celery juice because the fiber is removed and they think that’s where all the nutrition is. That’s false. With celery, the juice is where the nutrition lies. Celery is like many other herbs in that you extract the medicinal elements from the plant. Nobody has a cup of chamomile tea (which has many known benefits like relaxing the body and nerves) and then opens up the tea bag to eat the contents afterward so they can get their fiber and nutrition fix. Just like you don’t get your fiber from chamomile tea, you don’t get your fiber from celery juice. That doesn’t take away from celery juice being a nutritional powerhouse. You get your fiber from other fruits, leafy greens and vegetables you eat over the day.

8. There’s sugar in the celery juice.

This is a rumor I heard recently, but it’s completely false. Celery juice is a very low calorie and low carbohydrate drink, which means it has almost no sugar in it.

9. Celery juice has nitrates and nitrites.

This is another myth. As I share in Medical Medium Celery Juice, “Celery and celery juice can’t contain any nitrates that are activated or harmful unless the celery has oxidized or been dehydrated. The naturally occurring nitrates in celery don’t exist when the celery or fresh celery juice hasn’t yet oxidized.

When fresh celery juice or celery does oxidize, just as when any herb, vegetable, or fruit oxidizes, then a naturally occurring nitrate can develop. Keep in mind: this naturally occurring nitrate is never harmful in any way, shape, or form and can even be helpful.

Celery juice powder and celery powder have oxidized, so they can contain naturally occurring nitrates that developed through the oxidation process. They’re not harmful nitrates, though. These nitrates are not the same variety of nitrates that are considered to be irritating to some people.

It’s important to know that not all nitrates are the same, just as all people are not the same, all water is not the same, all sugar is not the same, and all protein is not the same. For example, gluten is an entirely different protein from the protein inside meat or the protein inside nuts. Also, the naturally occurring nitrates that can develop in an oxidized form of celery such as celery powder and celery juice powder are not the same as the harmful nitrates that are added to meat and all kinds of other products. Nitrates are different from nitrites; they’re not the same thing. Even celery powder, which does contain naturally occurring nitrates, can’t be relied upon as a method for curing foods such as pickles or meat because it still doesn’t contain nitrites.

Fresh celery juice also doesn’t contain nitrites. Nothing naturally occurring in celery and celery juice is harmful. This is the same for pure celery powder and pure celery juice powder (although I don’t recommend them as a replacement for fresh celery juice as they don’t have the same healing properties). Here’s where the confusion lies: harmful nitrates can be added to celery powder, celery juice powder, or celery salt by a company that makes it or uses it to make another product. Celery gets false blame for harmful nitrates in preserved meats and other products—when the truth is that it’s a classic case of contaminating celery with add-ins. Your fresh celery juice cannot have harmful nitrates in it unless you add them yourself. If you don’t drink fresh celery juice because you believe it contains harmful nitrates or nitrites, then you are going to lose the unique healing opportunity that fresh celery juice—which does not contain nitrates or nitrites—can provide.”

French Onion Soup

Ingredients:
1/2 tbsp olive oil (optional)
4 medium-sized white or yellow onions, sliced
3 garlic cloves, minced
2 tsp fresh thyme, leaves only
2 tbsp coconut aminos (optional)
4 cups/1 liter vegetable broth or water
1-2 bay leaves
1 1/2 tbsp arrowroot starch mixed with 3 tbsp water, to thicken (optional)
Sea salt (optional)

For the topping (optional):
4-6 slices gluten-free bread, toasted
1/2 cup raw cashews, soaked in hot water
1 tbsp arrowroot starch
1 tsp onion powder
1 tsp garlic powder
1 tbsp lemon juice
1/4 tsp paprika
1/2 tsp sea salt
1/2 cup water

Directions:
Heat oil in a large pot, if using. Alternatively add a couple tablespoons of water. Add the onions and cook on medium-high heat for 25-35 minutes, until dark and caramelized. Add the garlic, thyme, coconut aminos, vegetable broth or water and bay leaves. Simmer for 5 minutes, then add the arrowroot mixed with water and cook for a further 5 minutes. Taste and adjust seasoning.

To make the topping, blend the cashews, arrowroot, onion powder, garlic powder, lemon juice, paprika, sea salt and water until smooth. Pour into a small saucepan and whisk on medium-high heat until it gets thick. Remove from heat and set aside.

To serve, ladle the soup into oven-safe bowls. Spoon a few tablespoons of cashew cheese onto a slice of gluten free toast and place on top of the soup. Place in the oven, under the grill and broil for 2-3 minutes until browned. Alternatively, you can broil the cheese-covered toast slices separately on a baking tray and place on top of the soup. Serve immediately.

You have likely heard me talk about this powerful plant medicine before, so you probably know that when I recommend celery juice, I always recommend that you drink at least 16 ounces. Why that number? And why celery juice over raw celery sticks? Today we are going to dive into the answers to these questions by uncovering how celery juice travels through the body, what it encounters along the way, and why this herbal extract is just so important. I will cover the basics here, but my new book Medical Medium Celery Juice: The Most Powerful Medicine of Our Time Healing Millions Worldwide, is a resource for more advanced information on the benefits of celery juice that you won’t find anywhere else.

The Bottom Line

Celery juice is a powerful weapon against chronic illness, and no matter which diet you subscribe to—high-protein, high-fat, animal based, plant based—celery juice applies. Even if you follow the standard American diet and you are eating bagels and sandwiches on the run, adding celery juice on an empty stomach each morning can make a huge difference.

Beware of misinformation about celery juice, however. It is not true, for example, that celery juice contains sugar. Neither is it high in calories. In fact, celery juice is very low in calories and that’s why I recommend eating breakfast, like one of the breakfast recipes I include in the Medical Medium books, 30 minutes or more after your celery juice. It’s not a meal replacement but a medicine before you eat breakfast.

So why is it important to drink celery juice on an empty stomach? If your stomach is full of food, the celery juice you drink becomes diluted while battling all that food in your stomach. On an empty stomach, however, celery juice has a pathway to do the cleansing work it’s capable of. Even eating and drinking celery juice at the same time limits its chances of traveling through the body effectively. It’s also important to drink celery juice away from other liquids, including water. It’s ideal to have celery juice 30 minutes after drinking water or lemon water in the morning, or to have celery juice before water if you wish and then wait 30 minutes to drink your celery juice. There’s additional guidance than what I am sharing here that can help you get the best out of your celery juice and really make sure it works for you. It’s important to be informed so you don’t fall into any of the misinformation out there which is altering celery juice and preventing it from being a true healing tool for anyone who needs it or wants to use it. 16 Ounces Matters

Your most recent meal isn’t the only obstacle that celery juice faces as it travels through the body. We all have a buildup of toxins and bacteria that we have accumulated from eating toxic foods over time (as well as from other sources). Many times this couldn’t have been helped if we didn’t have access to healthier food options, or no one taught us how to eat differently. So much of the time, people are just eating to survive or eating what’s considered normal or convenient, and, culturally, many of us have been conditioned into eating and living a certain way. But the fact of the matter is, toxins are polluting our bodies—our livers, brains, and circulatory systems.

When you see or hear me recommend at least 16 ounces of celery juice, this is because two or four ounces just isn’t enough to cleanse our bodies of those toxins. It’s a good place to start if you are just beginning to incorporate celery juice into your diet, but building up to 16 ounces over time is important.

Obstacle Course

When celery juice travels through the body, the first thing it passes through is the mouth, where there are countless bacteria, even after brushing your teeth. Because celery juice is anti-bacterial, it starts fighting these bacteria. Celery juice contains undiscovered sodium cluster salts that fight staph, strep, and other varieties of bacteria and acids that live in the mouth. They strip bacteria of its membranes and neutralize acids before traveling onto the esophagus. Table salt, sea salt, or pink Himalayan salt won’t have the same effect. Not all salts are created equal. The sodium subgroup in celery juice is special and offers unique healing and detoxifying benefits. Our esophagi have different levels of ammonia deposits, as well as other bacteria and acids that have been sitting in the esophagus for years. Again, celery juice works on these to clear your esophagus of toxins.

As celery juice travels to the stomach, it encounters more ammonia, toxic acids, and bacteria like H. pylori. Debris from years of poor eating habits builds up on a ledge right before the duodenum, collecting undigested proteins and fats and stretching the stomach. This sludge, as I like to call it, sits on that ledge year after year. As I share in Medical Medium Celery Juice, celery juice has the ability to neutralize all of that as it passes through the body. This doesn’t happen in just one day, though, which means that it’s not only about drinking enough celery juice (16 ounces), but also about drinking celery juice consistently. The stomach is yet another part of the body where the sodium cluster salts eat away at that sludge. Added to that, there are glands in the stomach that produce gastric acid and hydrochloric acid, both essential to good digestion. Celery juice not only cleanses the stomach but also rejuvenates tired gastric glands—another reason you need more than just four or six ounces.

Once in the duodenum, the sodium cluster salts and other healing properties celery juice offers work toward balancing your pH levels. Balancing your pH matters because everyone is dealing with some acidity, and it’s important to do what you can to bring your body back to a healthy alkaline state. What’s more, there are bacteria in the duodenum such as E.coli, strep, and staph, plus fungus and a host of other invaders that medical research and science have yet to discover. We have good bacteria, too, but what research and science also doesn’t know is that celery juice feeds good bacteria. It is better than any prebiotic on the market. And, when the undiscovered sodium cluster salts in celery juice destroy bad bacteria, the dead bad bacteria also become food for good bacteria.

The Small Intestine

When your 16 ounces of celery juice finally makes it to the intestinal tract there is still so much work to be done. In the small intestine, it will encounter a thick lining of mucus containing more bottom feeders like strep and E.coli, as well as hardened and rancid fats that have built up over the years. These fats often can’t be broken up because of the weakened bile reserves and sluggish livers almost everyone today is dealing with. Foods that are not digested properly leave behind fats and proteins that stick to the sides of our intestinal walls. These reserves harbor disease-causing pathogens that may not affect you when you are 22 or 25 years old, but could really cause health problems for you as you start to get older. You can read Medical Medium Celery Juice to understand just how many symptoms and conditions—that are often labeled autoimmune, genetic or simply misunderstood—are caused by pathogens. Celery juice slowly dismantles this buildup.

Throughout our body we also have excess amounts of adrenaline, whether from stress, fear, constantly juggling the to-do list, or even too much strenuous exercise. This adrenaline is toxic to the liver and the brain. Celery juice fights off this adrenaline within the intestinal tract by binding to it and carrying it out of the body. When celery juice passes through the intestinal tract it then has to find its way to the bloodstream in order to get to your organs—think liver, brain, and gallbladder.

The nutrients in celery juice reach the liver through the hepatic portal vein. It is important to note here that almost everyone has liver issues. Even if you are just experiencing one small symptom, it still can be traced back to the liver. Celery juice has to cleanse the liver of pesticides and toxic heavy metals like cadmium, nickel, and copper, as well as the bacteria and viruses that feed off of them, and perform all of its other undiscovered functions, which I address in detail in Liver Rescue: Answers to Eczema, Psoriasis, Diabetes, Strep, Acne, Gout, Bloating, Gallstones, Adrenal Stress, Fatigue, Fatty Liver, Weight Issues, SIBO & Autoimmune Disease. If you are drinking under 16 ounces, your celery juice just won’t reach all of these areas of the body where there is a buildup of bacteria, viruses and other troublemakers.

Celery juice is also helpful for gallstones and gallbladder health overall. I share what causes gallstones and what impacts gallbladder health in detail in Medical Medium Celery Juice. The sodium cluster salts in celery juice help by restoring bile production, and as bile production increases, it works on breaking down old, rancid fats and proteins and killing off bacteria and viruses that pollute the gallbladder. If it is not cleansed of gallstones and bacteria for starters, the gallbladder can start weighing more and more, putting pressure on other organs and causing additional symptoms.

Apart from traveling via the hepatic portal highway, celery juice also dissolves through the intestinal tract lining to reach the bloodstream and move to the brain. Once there, sodium cluster salts help alleviate brain fog and improve focus. This has an impact on both your emotional and mental health. The reason for this is that sodium cluster salts are essentially complete electrolytes that bring neurotransmitter chemicals back to life. The result is improved focus, clarity, concentration, the neutralization of toxic heavy metals that cause or contribute to a huge number of neurological and other health issues, and the removal of toxins.

Important Guidance for Drinking Celery Juice

How you drink your celery juice matters as it will have a direct impact on how effective it is as an herbal medicine to help you and your loved ones with your health. When you are drinking your celery juice, don’t mix anything with it. This includes lemon juice! It’s important to drink it plain. Collagen and apple cider vinegar don’t belong in your celery juice either. These are trends that people are pushing to make money. When these other elements are added to celery juice, they actually prevent celery juice from working properly. What you want is the pure herbal tonic.

You also don’t want the fiber in your celery juice Celery sticks are not the same as drinking celery juice without the fiber. There is nothing wrong with celery sticks—you can add them to your salads or your smoothies, but the medicine to fight against lupus, fibromyalgia, vertigo, hyperthyroidism, weight gain, tingles, numbness, psoriasis, vitiligo, brain fog, anxiety, rheumatoid arthritis, acid reflux, and bloating, to name a few, comes when you drink juiced celery.

Another tip that can help is if you had a high fat dinner—perhaps chicken, soy, nuts and seeds, fried foods, or dessert—you can increase your celery juice intake the next day to help tackle that extra fat in the bloodstream. As soon as you take your first sip of celery juice, you are changing your body chemistry. At this point you might be wondering if 16 ounces is even enough. Perhaps 24 ounces sounds better. I often drink 32 ounces, but what is important to do the best you can and aim to have it daily as much as possible. If you are struggling with the flavor of celery juice, build up your intake slowly. If you need a break one day, take a break and come back to it the next day. Over time your taste buds will adjust and as more toxins are eliminated from your body, the taste of celery juice may become more pleasant to you. I’m so proud of you for doing the work to make and drink your celery juice.

Celery juice can help you strengthen whatever dietary and health practices you are committed to. Freshly juiced celery is best, but if you are buying celery juice at the store, watch out for HPP in pre-bottled juices.
