Potato salad is a welcome addition to any lunch or dinner table, barbecue, picnic, or social gathering. Potatoes are wrongly accused of contributing to obesity, diabetes, cancer, Candida overgrowth, and many other conditions, while in truth these miraculous tubers can reverse these illnesses. Dill is a great antioxidant and chemoprotective herb that is highly beneficial for viral, bacterial, yeast, and fungal infections, parasites, pain relief, sleep disorders, cancer prevention, and respiratory disorders. Dill is also regularly used as a digestive aid and can help reduce bad breath, acid reflux, flatulence, indigestion, and diarrhea.


Dill Potato Salad With Radishes & Peas

Ingredients:

1 1/2 lb small (new) potatoes
1 tsp salt
8 radishes, very thinly sliced
1 cup green peas
1/4 cup dill, finely chopped

Dressing:
1/4 cup tahini
2 tbsp water
1/4 cup lemon juice
2 tbsp dill
2 tbsp chives
Salt and pepper

Directions:

Place a medium-sized pot on the heat with a steaming basket and add two inch-es of water.

Place the potatoes in the pot, cover and cook until soft, about 30-40 minutes. Drain and let cool.

In a large bowl, combine the potatoes, radishes, peas and dill.

Make the dressing by blending together tahini, water, lemon juice, dill, chives, salt and pepper. Pour the dressing on the salad and mix well.

Serves: 4

Place all the berries in a bowl, add the honey and mix until coated. Serve immediately.

Watermelon Sparklers

Ingredients:

For the sparklers:
1 watermelon
1/2 small canary or cantaloupe melon
1/2 small honeydew melon
1 cup fresh blueberries
10-12 wooden skewers

Optional sparkler fairy dust ingredients:
2 tbsp lime zest
2 tbsp blonde coconut sugar

Directions:

Cut the watermelon into slices, about half an inch thick. Using a star-shaped cutter, cut the watermelon into stars. Set aside.

Using a small melon-baller, make balls out of the canary and honeydew melons.

Skewer the melon balls, alternating with blueberries and top with a watermelon star.

If you wish to make the optional sparkler fairy dust, simply mix the lime zest and blonde coconut sugar together and sprinkle above and over the watermelon stars on the sparklers.

Wild Blueberry Soup

Ingredients:

3 cups wild blueberries, fresh or frozen
2 cups water
2 tsp lemon juice
1/2 tsp lemon zest
1/4 tsp ground cinnamon or cardamom
2 tsp arrowroot powder mixed with 2 tbsp water
3 tbsp raw honey, more if needed
Mint (for garnish)

Directions:

In a large saucepan, bring the blueberries, water, lemon juice and zest and cinnamon or cardamom to a simmer. Cook for about 8-10 minutes, until the blueberries are looking soft. While the soup is cooking, mix the arrowroot powder with cold water and add it to the soup. Cook for another 2 minutes, until the soup thickens, then remove from the heat and let cool for 10 minutes. Stir in honey. Serve hot or chilled, with mint leaves for garnish. Leftovers keep in the fridge for up to 3 days.

Baked Zucchini Tater Tots

Ingredients:

2 medium-sized zucchinis
2 russet potatoes, peeled
1 tsp salt
1 tsp dried oregano

Directions:

Place a medium-sized pot on the heat with a steaming basket and add two inches of water. Place the potatoes in the pot, cover and cook until soft but so that there’s still some resistance, about 1 hour. Drain and let cool completely.

Preheat oven to 350F/180C. Grate the potato and place it in a bowl.

Grate the zucchini, place it in a clean dishtowel or nut milk bag and squeeze out as much liquid as possible. Add it to the bowl with grated potato. Add the salt and dried oregano, then mix well and shape it to small cylinders.

Place on a baking sheet covered with parchment paper and bake for 20-30 minutes, flipping half way. Serve with ketchup and enjoy!

Potato Nests with Spinach Salad Recipe

1.5 lb large russet potatoes
1 tbsp cassava flour

Salad:
1 cup baby spinach, tightly packed, finely chopped
2/3 cup cherry tomatoes, halved
1/2 ripe avocado, diced
1/4 cup cilantro, finely chopped
1 tbsp lemon juice
Salt and pepper, to taste

Directions:

Place a medium-sized pot on the heat with a steaming basket and add two inches of water. Place the potatoes in the pot, cover and cook until soft but so that there’s still some resistance, about 1 hour. Drain and let cool completely.

Preheat oven to 350F. Grate the potato and place it in a bowl with cassava flour, salt and pepper. Mix well.

Line a 6 or 12 muffin tin with squares of parchment paper and press the mixture in tightly, making an indentation in the middle. This makes about 12-16 nests. Bake for 30-45 minutes, until the sides have browned and the nest is holding shape.

While the nests are cooking, make the salad by combining all the ingredients in a bowl and mixing well.

Remove potato nests from tin and top with salad. Serve immediately.

* If you buy prepared artichoke hearts that have a preservative such as citric acid, soak them overnight in water to get rid of this corn-derived irritant.

* Enjoying artichokes for dinner helps your liver purge and clean itself in the early hours of the morning, while you sleep. For best results, try eating artichokes at 7 or 8 in the evening.

STEAMED ARTICHOKES WITH LEMON-HONEY DIPPING SAUCE

Preparing artichokes can seem daunting. All it really requires is hot water and some patience. When steamed until tender, artichokes are just waiting for you to pull them apart and dunk them into a luscious sauce of honey, olive oil, and sage.

4 artichokes
1⁄4 cup olive oil
1⁄4 cup honey
1⁄4 cup lemon juice
3 sage leaves

Prepare the artichokes by cutting off the top quarter of each and removing the stem. Using scissors, cut the remaining tips off of each of the leaves. Fill a large pot with 3 inches of water. Place the artichokes in a steamer basket inside the pot. Steam the artichokes for 30 to 45 minutes, until the leaves are tender and easily removed.

To make the dipping sauce, combine all the remaining ingredients in a small saucepan over high heat. Stir continuously until the sauce begins to thicken slightly, about 2 minutes. Remove from heat and serve immediately alongside the cooked artichokes.
