Olives, tomato and herbs are encased in crispy potato pockets in this delicious recipe, giving you flavors of the Mediterranean in a perfect little parcel. Make these Tomato & Olive Pockets for family, friends, children, or simply make them to enjoy all for yourself! They are jam packed with healing ingredients and can be enjoyed right after making or prepare them in advance and freeze them so they are ready right when you need them. Enjoy!

Tomato & Olive Pockets

Ingredients:
4-5 medium-sized potatoes (about 1.5 lb)
1 tbsp potato starch
3 tbsp tapioca flour (more if needed)
Salt and pepper
1 tsp dried oregano (optional)
1/2 - 1 tsp water (if needed)

Tomato sauce ingredients:
1/2 cup tomato paste
1 tsp dried oregano
1/2 tsp dried thyme
1 tsp raw honey
3-4 tbsp water
Sea salt and pepper, to taste

Olive Filling:
1 small tomato, finely diced
1/3 cup finely diced zucchini
5-6 olives, finely diced
2-3 basil leaves, finely chopped
Sea salt, to taste
Black pepper, to taste

Directions:
Place the potatoes in a large pot fitted with a steaming basket. Add a few inches of water and steam until soft, about 45 minutes to 1 hour. Remove and cool for 10-15 minutes, until cool enough to handle.

Place the potatoes in a large, flat-bottomed bowl or pot and mash until they are broken down. Add the sea salt, pepper, potato starch, tapioca flour, oregano and basil, and mash until the flour and starch are well combined. If the mixture is very dry, add a bit of warm water. If the mixture is very wet, add a bit more tapioca flour. The dough should be pliable and not stick to your fingers. Set aside while you make the filling.

Make the tomato sauce by combining the tomato paste, dried oregano, dried thyme, raw honey, water and salt and pepper in a bowl and mixing until uniform. Set aside.

Make the filling by combining the diced tomato, zucchini, olives, basil, sea salt and black pepper in a bowl and mixing well.

To make the pockets, take a handful of the potato mixture and roll it into a ball. Flatten the sides out so that there is a cavity in the middle, then add a couple teaspoons of the tomato sauce and filling. Close the pocket gently and smooth out any creases. Repeat with remaining dough.

Place a non-stick pan over medium-low heat and spray with a bit of avocado oil (optional). Add the pockets and cook for 5-10 minutes on either side, until browned and crispy. You can bake them in the oven at 350F for an additional 20 minutes if you want them even more crispy.

Makes: 4-5 servings

These mouthwatering Wild Blueberry Waffles are the perfect treat. Serve them up as a weekend breakfast for your children or tuck into them for an afternoon snack or even a fun dinner! Whenever you enjoy them, they’ll be sure to please.

The star ingredient in this recipe is the wild blueberries. Wild blueberries contain dozens of undiscovered antioxidants, including anthocyanin varieties. There’s not just one pigment inside a wild blueberry; there are dozens of pigments not yet researched or studied. The wild blueberry is to the liver as mother’s milk is to a baby. Not only do wild blueberries have the ability to grab on to plenty of troublemakers, they also hold on to them as they leave the liver, in a way that most other healing foods cannot. The pigments in wild blueberries have the ability to saturate deep into liver cells and cross cell walls and membranes inside the liver, spreading their blue everywhere. Wild blueberries enhance the intestinal tract, feeding good bacteria there, which benefits the liver greatly.

Wild Blueberry Waffles

Ingredients:
1 1/2 cups gluten-free oat flour
1 tbsp baking powder
3/4 cup unsweetened apple sauce
2/3 cup unsweetened almond milk
1/4 cup coconut sugar
1 tsp alcohol-free vanilla extract
1/4 cup frozen wild blueberries
1/3 cup fresh or defrosted wild blueberries, to serve
1-2 tbsp maple syrup, for drizzling
Spray avocado oil, if needed

For the optional coconut whipped cream:
1 14-ounce can coconut cream or full fat coconut milk, chilled in the fridge overnight
2-3 tbsp raw honey

Directions:
To make the optional whipped cream, chill your mixing bowl in the freezer for 10 minutes. When the bowl is chilled, remove the thick cream from the top of the can, leaving the coconut water behind. Using an electric whisk, beat the cream for 2-3 minutes until you get soft peaks. Add the honey and beat for another 2 minutes. Set aside.

To make the waffles, combine the oat flour and baking powder in a bowl. Whisk to combine. In another bowl, combine the apple sauce, almond milk, coconut sugar and vanilla. Mix well, then pour into the dry ingredients. Stir until you get a uniform batter. Add the frozen wild blueberries and gently fold them in.

Make sure your waffle iron is hot. If it is not non-stick, spray it very lightly with avocado oil and remove the excess oil with paper towels. Ladle the batter onto the waffle iron and cook according to manufacturer's instructions. Repeat with rest of the batter. Serve with coconut whipped cream, fresh blueberries and maple syrup.

Supplementing with L-lysine

If you’re dealing with a chronic symptom or illness, taking only 500mg of L-lysine a day (as is commonly recommended) might not be sufficient. If you’re fighting off Epstein-Barr or another aggravating herpes family virus, including those that cause cold sores and canker sores, a higher dosage of L-lysine may be necessary. That being said, it is important to discuss the exact dosage you plan on taking with a practitioner so that you can best support your specific health issues. If you aren’t struggling with a symptom or condition, but want to help shield yourself from picking up one of the hundreds of possible strains, taking a smaller dose of lysine can be a protective step. Foods Rich in L-Lysine

There are some foods that also contain L-lysine, although if you’re dealing with a viral-related symptom or condition, you may wish to supplement with L-lysine too, not just eat foods with L-lysine.

Potatoes are full of nutrients, including L-lysine. The humble potato is one of the ultimate EBV and virus killers and is wonderful to include in your diet despite it being under attack by many diet trends today. These diets and the experts behind them don’t understand how often viruses are behind chronic illnesses and symptoms, nor do they understand what the body needs to heal from them. Steamed potatoes without any cheese, cream, butter, bacon bits and other troublesome foods served with them are a deeply healing food. Kiwis, apples, cherries, and pears also contain L-lysine and are helpful to include regularly in your diet.

Directions:

Add a bit more milk if needed. Serve straight away, topped with chopped nuts, or place in the freezer for 1-2 hours for a firmer texture.

Spirulina is often deemed the most nutritionally complete of all foods and has countless uses as a supplement for maintaining good health and preventing diseases. This is because it contains a plentiful supply of many important nutrients and antioxidants, including protein, complex carbohydrates, iron, and vitamins A and K, as well as B complex. It’s also rich in chlorophyll, fatty and nucleic acids, and lipids. Spirulina is rich in gamma-linolenic acid, or GLA, a compound found in breast milk that helps develop healthier babies.

Best Source of Beta-Carotene

Spirulina provides a profusion of carotenoids such as best-carotene and yellow xanthophylls. In fact, spirulina is the richest beta-carotene food. The beta-carotene found in spirulina is ten times more concentrated than carrots.

Iron-Rich

Nearly everyone is deficient in vitamin B12 today. Even if you get a blood test that shows your vitamin B12 levels are normal, that doesn’t mean it’s usable B12 that’s absorbing where it needs to in your body. Your central nervous system, liver, or other organs may still be severely deficient, and a deficiency of the right kind of B12, which is B12 that’s a combination of both methylcobalamin and adenosylcobalamin, sets the stage for all kinds of symptoms and conditions to develop or worsen. Lack of B12 is a very real deficiency with very real health consequences. The body relies on B12 for tens of thousands of daily functions.

Illness & Symptom Recovery

Secondly, this particular type of B12 contains electrolytes, which help counteract the storm happening in the brain when someone has a condition affecting the brain or is under stress. As I share in my books, viruses are the most common cause of all kinds of chronic illnesses and conditions, usually in combination with toxins of some variety. One of these four factors is viruses.

When fighting a viral-caused symptom or condition, such as chronic fatigue syndrome, eczema, psoriasis, tinnitus, vertigo, thyroid problems, PCOS, Lyme disease (for the truth about Lyme read Medical Medium), lupus, dry skin, brittle hair, prostate conditions, and many more, it is essential to use a B12 blend of both adenosylcobalamin and methylcobalamin. Including a methylfolate supplement along with this B12 blend is especially helpful.

Vitamin B12, as adenosylcobalamin with methylcobalamin, protects your entire body from neurotoxin damage from the many mutated strains of the Epstein-Barr virus, shingles and other harmful viruses. It also repairs and strengthens the areas of the nervous system and other parts of the body that have been damaged by viruses. This type of B12 also helps strengthen neurotransmitter chemicals in the brain so it can stay strong against the viruses that are behind so many neurological illnesses.

B12 and Elevated Biotics
A special probiotic film covers the leaves and skins of fruits and vegetables. I call these probiotics elevated biotics, or elevated microorganisms, because they cover the above-ground surfaces of raw, unwashed (or lightly rinsed) plant foods. I share about these special microorganisms in all my books.

Unlike factory-produced probiotics and soil borne organisms, elevated biotics are able to survive your digestive process and make it to your ileum, the final section of your small intestinal tract that creates the vitamin B12 critical to your body’s functioning.
One reason to address at B12 deficiency (by getting more elevated biotics) is that B12 keeps homocysteine levels down, which translates to less inflammation in the body. Plus, the B12 specifically produced by elevated biotics is vital to brain health, because it fortifies our neurotransmitters, boosting mental function and keeping depression at bay. Without B12, we die. It’s that critical.

Whenever possible, grow any plants of your own that you can, whether it’s tomato plants, apple trees and beds of kale or it’s just indoor potted herbs or sprouts or microgreens you grow on your kitchen counter. Eat these plants unwashed or very lightly rinsed to remove just the dirt. Don’t soak or scrub them. If you have a trusted farmer you have a relationship with and you know their growing practices very well, you could also eat their produce unwashed or with a very gentle rinse. This is a great way to get these elevated biotics. In addition to the right B12 supplement this is great way to start restoring your B12 levels in the forms the body needs.

Gene Mutation and Methylation Issues
B12 is critical to your body’s ability to methylate many other nutrients. The liver relies on this B vitamin and stores large quantities of it, delving into it continually as part of regular organ function. It also relies on B12 for a function the liver can perform when it’s out of stock of essentials: the ability to produce trace amounts of certain nutrients and chemical compounds on its own. The liver can only do this when it has its key ingredient, B12, in enough supply to send it out to your brain, the rest of your nervous system, your heart, and other places in your body that desperately need it

When the liver doesn’t have enough B12 already on hand, no B12 coming from what can be produced in the ileum, and the liver is too compromised (from viruses and their byproduct) to produce B12 for itself, a serious methylation issue can arise.

If you’ve been given an MTHFR gene mutation diagnosis, know that over time the right kind of B12 can reverse it—because it fixes damage in the body that triggers off false positives on gene mutation tests. Surprised? You read that right: gene mutation issues are not actually genetic and can be healed. Liver Health
Your liver doesn’t have to do any work to convert B12 into a usable form when it’s in the adenosylcobalamin and methylcobalamin form. This type of B12 helps with liver cell communication, improving the ability of cells inside the liver to transfer information to one another with ease rather than resistance. It also protects nerve tissue that enters and runs all through the liver.

Vitamin B12 is highly instrumental to all of the liver’s over 2,000 chemical functions and highly instrumental in activating the liver’s ability to utilize, process, and distribute all other vitamins and minerals that are stored inside of it. B12 helps keep a liver out of stagnation, strengthens hepatocytes and all other liver cells as well as liver lobules, and prevents the liver’s blood vessels from atrophying. Avoid B12 Injections
The right B12 supplement is a better choice than B12 injections. These injections do not contain the right kind of B12 blend and have the potential to trigger an overreaction in a sensitive body. Plus, B12 has to be taken orally to be effective. When we take oral B12, it gets absorbed into the digestive system, where it’s “tagged” and made active and bioavailable, so that when it enters the bloodstream, it’s in a form that our nerves and organs accept. It’s perfect for an afternoon snack with a cup of your favorite herbal tea, or enjoy it after dinner for dessert. This recipe is not only gluten-free and dairy free; it’s also low in fat, especially if you skip the optional walnuts on top. You can make enough to freeze leftovers that you can store in individual slices in the freezer. Then when you want to enjoy a slice, simply let it defrost, heat it up in the oven and enjoy!

Two of the star ingredients in this recipe are the wild blueberries and bananas. Below is an excerpt from Liver Rescue that showcases just some of their healing properties.

Wild blueberries: Contain dozens of undiscovered antioxidants, including anthocyanin varieties. There’s not just one pigment inside a wild blueberry; there are dozens of pigments not yet researched or studied. The wild blueberry is to the liver as mother’s milk is to a baby. Not only do wild blueberries have the ability to grab on to plenty of troublemakers, they also hold on to them as they leave the liver, in a way that most other healing foods cannot. The pigments in wild blueberries have the ability to saturate deep into liver cells and cross cell walls and membranes inside the liver, spreading their blue everywhere. Wild blueberries enhance the intestinal tract, feeding good bacteria there, which benefits the liver greatly.

Bananas: The fructose in banana is liver’s favorite source of food. It provides quick fuel to the liver and wakes up sleepy cells, increasing their ingenuity and work output. Soothes the linings of the intestinal tract and also soothes the nerves attached to the intestinal tract. Contrary to popular belief, bananas are one of the most antibacterial, anti-yeast, antifungal foods. A great food to combine with other nutrient-rich foods or to take with supplements, because they improve the liver’s ability to absorb nutrients.

Wild Blueberry Banana Bread

Ingredients:
3 ripe bananas
1/4 cup maple syrup
1/4 cup coconut sugar
1 tsp alcohol-free vanilla extract
1/2 cup unsweetened almond milk
2 cups gluten-free oat flour
1/2 tsp sea salt
1 tsp baking powder
1/2 tsp baking soda
1/2 cup frozen wild blueberries
Chopped walnuts, for topping (optional)

Directions:
Preheat oven to 350F. Line a 9x5 loaf pan with parchment paper.

Place the bananas in a bowl and mash with a fork. Add the maple syrup, coconut sugar, vanilla extract and almond milk. Mix well.

In another bowl, combine the oat flour, sea salt, baking powder and baking soda. Whisk until lump free. Add the wet ingredients and fold gently until you get a uniform batter. Add the blueberries and stir very gently, just enough to incorporate them.

Pour the batter into the loaf pan and bake in the oven for 40 minutes. After this, turn the oven off but leave the banana bread in the oven for 10 more minutes. Remove from the oven and cool completely before slicing.

One of the most common questions we receive is: "Which juicer is the best for making celery juice?" Today I am answering that question for you.

Masticating or Centrifugal Juicer?

The best juicer for juicing celery is a cold press masticating juicer. Masticating juicers more gently and slowly extract the juice from celery and don’t generate as much heat during the juicing process. This helps to preserve as much of the nutrients in your celery as possible and minimize oxidation.

Masticating juicers will also extract as much juice as possible from your celery, which means you will use less celery to get your sixteen ounces of juice than you would if you used a centrifugal juicer.

Another benefit of masticating juicers is that they are quiet. This makes them the perfect juicer for making celery juice first thing in the morning without waking up anyone else in your home.

Centrifugal juicers will still juice celery, so they are certainly great to use. Celery juice made in a centrifugal juicer and consumed right away is still very healing! However, if you are able to use a masticating juicer, the juice produced will be higher quality and richer in nutrients.

Below you will find three masticating juicers that juice celery well for you to consider. Each juicer is different in its quality and cost. There are three options so you can select the one that fits your personal needs and budget as you wish.

Aicok Masticating Juicer

The Aicok masticating juicer is an entry level, lower priced cold press juicer. It can juice celery as well as other fruits and vegetables such as wheatgrass, leafy greens, ginger, apples, oranges, etc. Better masticating vegetables and fruits than other juicers, higher juice yield and drier pulp. The auger on this juicer spins at 80 RPM, which allows vitamins, enzymes, minerals, trace minerals and nutrients to be better preserved than a centrifugal juicer. Keep minimal Oxidation, low heat build-up, less foaming and no clogging.

Omega Masticating Juicer

This is a great mid-range masticating juicer that produces high quality cold pressed juice. The Omega Masticating Juicer also uses a low speed of 80 RPMs, which results in minimal heat buildup and oxidation and more nutrient-rich juice than a centrifugal juicer can produce. This is a dual stage juicer, which means the juice is first extracted by crushing the fruit or vegetable. Then, before the pulp is ejected, the pulp is squeezed during the second pressed stage. This results in a higher yield of juice and a very dry pulp. The Omega can juice celery, as well as fruits, vegetables, leafy greens and wheatgrass.

Greenstar Masticating Juicer

The Greenstar is higher end masticating juicer that produces very high quality and nutrient dense juice. It’s considered to be one of the very best masticating juicers available. It uses a slow 110 RPM cold press juice extraction so there is minimal oxidation and nutrient loss. The Greenstar uses stainless steel and bio-ceramic magnetic twin gears that are said to extract juice of higher nutritional content and stabilizing the juice so it remains fresher longer. This juicer can juice celery along with vegetables, fruits, greens, and wheatgrass.

Take a bite into these wonderfully aromatic cinnamon-coconut sugar coated cookies. Dairy-free and grain-free, they’re a fantastic healthier cookie option that are brimming with flavor. These cookies would make a great lunchbox addition for children, after school snack, or fun weekend treat to share with friends and family.

Cinnamon is particularly good for helping diarrhea, nausea, vomiting, indigestion, flatulence, and arthritis. Cinnamon is known to help prevent and shorten the duration of the flu as well to eliminate congestion and mucus from the body. It is also very beneficial for lowering cholesterol and to help regulate blood sugar. It is known to help increase circulation and contains anti-clotting compounds, which makes it highly beneficial for helping to prevent strokes and coronary artery disease.

It is also very good for reducing inflammation in the body making it helpful for people with autoimmune disorders such as fibromyalgia and chronic fatigue syndrome. Cinnamon also has the amazing ability to stop yeast infections, candida, and menstrual cramps.

Snickerdoodle Cookies

Ingredients:
1 1/2 cups almond flour
1/2 cup + 1 tbsp coconut flour
1 tsp baking powder (aluminium free)
1/4 tsp sea salt
1/2 tsp cinnamon
1 tsp lemon juice
1/3 cup maple syrup
1/4 cup coconut oil, melted
2 tsp alcohol-free vanilla extract

Coating:
2 tsp cinnamon
1/4 cup coconut sugar

Directions:
Preheat oven to 350F.

Line a baking sheet with parchment paper. Mix together the cinnamon and coconut sugar to make the coating. Set aside.

Place the almond flour, coconut flour, baking powder, sea salt and cinnamon in a medium-sized bowl and whisk until combined. Add the lemon juice, maple syrup, coconut oil, vanilla and stir until you get a uniform dough. If the mixture is too wet, add a bit more coconut flour.

Scoop out heaping tablespoons of the dough and roll into balls. Roll them in the cinnamon coconut sugar and place on the parchment paper. Flatten gently with your palm or the bottom of a glass.

Place in the oven and bake for 10 minutes, until slightly browned on the bottom. Remove from the oven and cool completely.

Makes: 10-12 cookies
